It has come to my attention that there are some T3 ships (like the Loki) which are focused on combat. Are there any mining variants? Like, Mining Barge is T1, Exhumer is T2 and something else is T3?

The remaining subsystems for the strategic cruisers might be mining focused... but nothing yet.
My own preference would be for the final subs to be cargo, mining and gas harvesting bonussed.
If (particularly from your choice of examples) you're looking for what I think you're looking for then I'm afraid that, even if the final subs match that template, you're going to be disappointed. CCP have stated, on more than one occasion, that no ship will ever beat the Hulk for mining yield. What remains available are gas harvesters, flexibility and resilience. --

Give a large boost to the cargo hold and a reduction in the fitting requirements of strip miners and gas harvesters. The result? A viable mining ship that can defend itself. It probably shouldn't be able to outmine a Hulk, perhaps put it on a Retriever level, yet still have guns/missiles, and a decent mid and low slot selection.

why the hell would you want a t3 mining ship there is already to much ore on the market. better mining ship = eve more ore on the market so lower prices so overall your no better off.
