Hello there!
I started playing EVE on July 4th, so I'm pretty new at all of this, and as you can guess, a little overwhelmed. What I'm looking for is some help learning how to outfit my ships. I'm not sure if there is anything out there like what I'm looking for, but maybe some of you kind folks could point me in the right direction.
What I'm looking for is something that pretty much says, if you are flying X ship and want to do Y thing, you should outfit these things. I mean, I'm lost here guys. Should I do beam lasers, or pulse lasers, what kind of crystals to use, etc. I'm pretty darn lost here.

Yes use that but also look at some of the fits people suggest on the forums as they can be a good base for fittings. Also just experience will help in what you want to outfit

The only problem with the Eve Eft program is its for Windows. Unless I missed something, I can't use it on my Mac. :(

Best approach is: decide what you want to do. Then make your base ship more like your ideal ship.
Most important thing: do not try to do more than one thing at once. You will fail at all of them. The key in EvE is to make the enemy engage you (or you engage him) on your own terms, and to have your own terms your ship needs focus.
Anyway if you end up having specific questions you can always try some of the forums out there like scrapheap challange (for more leet view of ship fittings) or battleclinic (where you will have to shuffle through **** to get the good stuff) (google them up).

Then put them in EFT and play around with them a bit. EVE HQ also has a good fitting manager (I prefer EFT as it's very light to run). Always download EFT from the forum link, as there are some bad copies floating around.
General tips for PVE mission fits : - long range guns (with ammo for short, long, and possibly medium range). - afterburner - active tank with mission-rat specific resists - cap stable if possible - bring drones !
Keep range and 'kite' them. Always kill frigates first, especially if they can web/scramble.
Don't be afraid to experiment ! Try everything you can think of. This is how you learn.
EDIT : You can use your API key to let EFT use your actual skills.

Fitting ships can be very specific but usually it comes down to just a few things:
1. Resources. All modules require some cpu and powergrid. As ships aren't that generous with resoruces you can upgrade your cpu by training Electronics and powergrid by training Engineering. It may seem quite a long wait but it's definitely worth it. As you're Amarr you'll also need a lot of capacitor, which means Energy Systems Operation is highly recommended.
2. Defense/tank. You may want to increase your ships's survivability by strengthening its defenses. Amarr usually tank armor, but you can opt to use shields too. NEVER use both on the same ship, investing in 1 type is always better. Next to that speed also migitates a lot of damage, using an afterburner will greatly decrease damage taken if you keep moving. Also keeping range and "kite" can work as a defense, if you use very long range weapons so (most) opponents can't hit you you don't need a lot of extra defenses.
3. Offense. Pulses have lower range and fire faster, beams have longer range and fire slower but do more damage per volley. Generally short range = more damage but that also means you're more likely to be within the opponent's range so it's a trade-off. Experiment a little with it, if you right click on a laser that has a crystal equiped it tells the damage modifier and optimal/falloff range. Also: never equip different lasers on the same ship.
That's basically how it works most of the time.

Ship Fitting Guide
In addition to the other links one of the things that makes these kinds of decisions complex is that there's often no single best loadout, often a lot of very bad loadouts. But some rules:
1: Match your ship and modules. If you want to do PvE ratting or mission running, you want a ship with weapon bonuses and weapons to match. If you want to do mining, get a mining boat.
2: Don't mix guns or ammo. Your goal in combat is to manage your range to the enemy and your traversal speed in relationship to the enemy. Identical guns allows you to find a sweet spot where all of your guns do maximum damage.
Long range: beam lasers, railguns, artillery Short range: pulse lasers, blasters, autocannons
Bigger is not necessarily better. Large guns have trouble tracking smaller targets. Long-range weapons have worse tracking. Find a combat style you feel comfortable with and pick the weapons and ammo to match.
3: Pick a tank. You'll either armor or shield tank, but not both. Your choices are explored in the tanking guide on the forums.
4: Pick propulsion enhancement. For PvP, you'll likely train to a Micro Warp Drive. For PvE, you'll go with an afterburner.
5: Utility slots depend on what you want to do or need. PvP piracy will make use of warp drive scramblers and possibly ewar modules. I use a salvager to supplement mission income. Miners will load mining lasers. CPU and cap upgrades can be useful as well.
