I just went to Jita by accident (the less expensive mining laser was there). Why is this system so crowded?

While some MMOs may have only one place for trade, in those that have options, one usually rises above others.

EvE, like many other MMOs, has places where you go to do business - buy new stuff, sell old stuff, play the Auctions Houses, etc.
Main difference is that in EvE, there really isn't a Auction House, OR a NPC Market. EVERYTHING is player-run, the the only "seeded" items (Ssold by NPCs) being basic gear, skillbooks, and so-called "faction" gear through a entity called the LP Store.
In every region, there's always one system that's a bit more central than other are, and those become "trade hubs" - places where people come together to do their trading. Simply because it's easier to do so in one place, than to try to do it on a system-by-system basius.
Jita is roughly centrally located in terms of jumps to the entire EvE universe. Therefore, it's become the trade hub of ALL trade hubs. Being that this is true, Jita has some extra hardware to keep it running Even witht hat hardware, though, Jita is crwoded and a bit laggy on the best of days. Weekedns are the WORST, of course.
If I was you, I'd stay out of Jita during weekends - most vets do, knowing wehat to expect.

Yes Jita can be a pain, once I spent like 15 minutes from jumping to docking in the IV - 4 station. Most of times its playable. I even tried logging off while on Jita space, stargate, or outside station, and logged in, and it's not the nightmare one could think it could be.
Other trade-hubs are Amarr*, Tash-Murkon, Nonni, Rens, Oursaleart...
*this solar system is same name as the faction lol.

You seem to smarter than most. Why make a few more ISK when it takes a few minutes to do anything? Stick to the "secondary" markets and you'll do just fine, plus you'll find it easier to do it.

Sadly, most of those ships weren't AFK....
Thing is, some of the best deals in the universe are in Jita, being that as the main trade hub of all of EvE, the competition is fierce. Note I said SOME, a sometimes the deals for what you want are better elsewhere...
Jita lag can be helped a bit by creating a Overview tab that doesn't list any ships - the Overveiw causes a LOT of lag if the system is busy while it loads and updates, and removing ships from it is a good way to cut down on all the updating required. In case you ever wondered why the client seems to pause for a bit whenever you approach a busy gate - well, now you know :)
Jita is also the only place where you are virtually guaranteed a sale for your goods - not at the best price, true - but at least you'll get your ISKies in a reasonable time. Makes it a missionrunner's dream to sell off their mission junk.
Sum total - it's not ALL bad - just know what you're getting into when you go there.

As an experienced player with an older computer, I find this to be less true today than 6-12 months ago. I rarely experience grid load lag anymore, even in large (400+) pvp battles. General system lag (module activation, market access, managing hangars with large number of items, "rubber banding" when warping) is still just as prevalent in extreme cases.
That said, in busy system, having a clear overview helps in just selecting the next gate to warp to.
