This character is only going to be used for industry (No trade or combat). Currently I've not used any of my two remaps and I've got two options.
1) Wait until I've gotten into a hulk and then remap for max int/mem to train up the rest of the industrial skills.
2) Use first remap to max out per/wil to speed up getting mining barge and exhumer to level 5 and then remap again to max out int/mem to train up rest of industrial skills.
I'm not interested in flying an orca or freighter on this character so I won't need to train up any leadership skills or spaceship command skills needed for those ships. ----

The way you're presenting it now, 2) is the best option. 1) would be a waste of a perfectly good remap (because you're not using it while you could). |

You need mining and science at 4, industry at 5 to train mining barge. With exhumers - astrogeology at 5. And those are int/mem skills.
I guess you will have hard time if you remap per/will first. You will get your mining Osprey very fast, but thats all :)
I guess balanced attributes are better until hulk, then remap and train all processing and minig skills.

Here is what Im doing right now, I just made a mining/ industrial alt, I sent some ISK to the new character, bought the learning skills and remaped to heavy memory/int. Im training up up all the basic and advance learning skills right now, in the most efficient method out, including some cybernetics for basic implants. After that is done, in about 2 weeks, I'm gonna start learning mining and industrial to max and then the extra industry skills to 3 or 4 depending on their utility since they use memory as main and int as secondary. ( Yeah, this will take time, and I wont have a mining cruiser to mine while its doing it, but i wont waste a remap.) After that, I might remap to a more stable , less bias form. Probably favoring int and perception with a dash of memory.

I'm already in a retriever and have industry and mining to level five, science at level four and astrogeology training to level five at the moment. Once thats out the way I was going to max out perception and willpower to train those spaceship command skill as quickly as possible before going for max int and mem for everything else.
Sorry I didn't explain that I was already in a retriever and mention the skills I already have. Learning skills are at 4/3 with +3 implants too so thats all sorted for the moment. ----

Well, number 2 then seems ok, get every space command thing you need while you're at it and and then switch back to memory/int. |

I'd plug all your skills into EVEmon and see what it thinks. I saved 27 days by remapping before learning anything.

Number two if you knw for sure you're gunna spend the whole year on training industrial/science skills. |

Before you switch to pure industrial you probably want to train up mining drones skills (including drone interfacing) so that you can maximise your yield there.
And I'm guess this is going to be a 100% carebear miner, otherwise you want to get some engineering a shield tanking skills so your hulk can mine without having to worry about those 0.0 rats.

Secret option number 3:
- Don't remap straight away, train learning skills up a bit (basics to 4, maybe start the adv ones) - Train science 4, industrial 5 and astrogeology 4 (you can come back and get astro to 5 later when you have better atts) - Remap high perc/will (prob 12/12/5/5/5) - Train focus and clarity higher now - Train barge, then exhumers both to 5 (and spaceship command & racial indy to 4 or 5 if you like/need them) - Remap high Int/Mem (12/12/5/5/5 or maybe higher mem if you JUST want indy skills) - Finish basic learnings to 5 and train int/mem adv higher if you like - Train indy skills until your eyes bleed from shooting too many rocks
