So how would one properly work the market in a mission hub? I'm currently just buying minerals cheaply for people that don't feel like running their wares to higher selling systems, and then reselling them higher. What else is there to do to make money in a mission hub system?

Salvage is the obvious big profit item, and thus is overfarmed and no longer big profit in any mission hub. ;)

i've heard that mission runners would need ammo and sometimes even drones and tankstuff.
motsu would be great place and irijunen.
just what i've heard...

Buy under-priced mission loots and reprocess them for materials. Manufacture ammo, drones, fittings, and sell them at a mark-up.
Set up personal business contacts with dedicated mission runners who'll sell to you first before they go to the market. Potentially can get reduced rates from them.
There's always an opportunity :).
