Anyone have any Ideas on goals to set for a small corp that will make profit and be fun for everyone?

How about mission marathon. Corp sets 50% tax rate, and as a group you tackle as many missions as you can in an hour, see how much isk the corp can raise.
Don't like missions?
Oh well how about an internal pvp contest. Limit the ships and modules to what you like (best idea is to start small), maybe progress in hull size through the day, a few team matches and then a battle royale.
Don't like pvp?
Well there's always mining then, pick a system, and clear out all of it's belts. Split the ore between the corp and corp members.
Don't do mining?
What the heck do you do in game then??

I've been wondering the same thing as the OP, what kind of activities/events to have with our small corp.
So far, we've had a frigate 1-on-1 tournament. That was fun. The corp ate the cost of the frigates (T1 only). Fittings were the responsibility of the pilots, and therefore anything was allowed. Winners of a match were allowed to loot the destroyed ship, so it was a chance for newer players to score a few T2 items or faction ammo. To make it interesting, the corp also ponied up for a 10M first-place prize and 5M 2nd-place prize. We also created a "Frigate Dueling Champion" decoration and awarded it to the winner.
It was good fun, but the frigate tournament was pure ISK loss for the corp.
I like the idea of a mission marathon. I think we'd need to have it over 2-3 hours, though. It usually takes me an hour or so just to run one mission, when you add in looting and salvaging. I also like that the corp and all its members would be gaining faction rep. Cool idea.
We haven't had much success with corporate mining ops. Mining (at least at our level) just isn't as profitable as running missions, so few of our members have put any effort into mining. Maybe if mining gets a boost someday it will be an option...

My alt's corp did a Frig Night once. Basically we dueled with T1 frigs with only basic, non named T1 fittings (to keep it fair, as not everyone can afford Meta 4/T2). People were linked together by means of the amount of skill points they had in the combat areas. We stopped when we hit structure so no one lost a lot of money.
It's a fun way of having your corp (ours was an indy carebear corp, go figure) learn some stuff about pvp, as everyone does something different.

As far as raising isk goes, it seems to be about who you know. My corp got in contact with a merc corp and we provide them with a steady flow of ships at static rates, now we roll it in. Once we had a seed, we created 3 teams and did a corp mining contest. The team that mined the most in a week got a plex to sell or keep, it took the monotony out of grinding mats for our ships. Also, corp races are fun, set up a simple track with cans and do some laps in your fastest ships, weapons free the final lap. Fly safe!

Define goals? As it do you mean make a certain amount of isk or get everyone to a particular standing with corp X etc...
If you want everyone to have access to L3 research agents and someone has access to L4 combat agents from the same corporation, do group missions for the combat agent to build isk and standing.
One pilot in a Battlecruiser (Drake/Myrmidon/Harbinger/, 1 in support cruiser (Osprey/Exqueror/Augoror/sorry no Minmatar), and then a bunch of T1 cruisers/battlecruisers to provide additional firepower.
I have found missions done as a group much more fun than those done solo.
