So, I have EVEHQ (awesome program to track stuff) on 3 PCs, my home, work, and a remote server. I am having issues because apparently the Assets API can only be downloaded very infrequently (as opposed to the other APIs which update very often).
1. How often can I download my assets via API? (I checked the API documentation and it doesn't list assets specificly anywhere, just wallet, market, etc).
2. If its once a day (too infrequent for me, when I need it on 3 PCs), can I somehow COPY it once its downloaded into one EVEHQ and then move it to my work pc and load it there? IS there another alternative to downloading it via API?

Sounds like an excellent question for the makers of EVE HQ (http://www.evehq.net/). They're the ones that created the app, so you should contact them directly. As far as I know, the assets can only be downloaded once every 24 hours to avoid overwhelming the EVE servers with incessant requests for all that data.

According to EVE Dev, it's a 23-hour caching timer, i.e. once a day that you can download this information from the main servers.
So as noted above, you'd need to get application support (basically an externally-accessible cache) to get what you want to happen. It's a reasonable feature request, though.

2. One of the features of EveHQ is its ability to run off a removable storage device such as a USB drive. A number of people use this method when wanting to access EveHQ from multiple PCs.
