Does Eve have a method for separating the items I have in a station so as to organize them better? Can I purchase/rent individual lockers in a station so I can store say, weapons in one locker and ore in another? Is this possible? Thanks.

You may not actually want to go with station containers... They're ginormous. I don't believe it is possible to move them at all.
I have a pile of Giant Secure Containers that I use... More than big enough for my needs, and I can fit several of them into an industrial to haul things off to market.

The Giant Secure Containers are usually the best since they can be moved. I usually have a few in each station. They are typically labled Armor and Drones, Guns and Ammo, Salvage, PVP mods (EW stuffs, webs, MWD, scanner stuffs, bubble stuffs), Reprocessing stuffs, and Market goods.
These containers make it much easier but they can get a little jumbled but that is when I know I need to do some station cleaning.

Station containers are way cheaper (about 20k isk) than Giant Secure Containers (GSC), and they are sold in every NPC station. Since they can't be moved out of the station, they are essentially a sort of "folder" for your inventory.
GSC are the largest containers you can put into a ship, and they are more useful for 0.0 where you cannot buy station containers.
Inventory management needs a total do-over. Do me a favor and bump my thread in the features and ideas forum to help CCP get the idea.

If you're just using them to sort out stuff in a station that you use a lot then they're well worth it.
If you end up moving then you can always sell them.

Technically, freight containers are the largest you can fit into a ship.
I prefer to use these rather than station containers to avoid the annoying default locking of items that sometimes happens with station containers, especially after a patch.
GSCs are just about the right size to keep a small amount of frequently used modules, like drones, resistance hardeners, structure/armour reppers, etc, but nowhere near large enough for storing your main inventory.
