People say that a method of defense is speed. Could someone explain to me in great detail what is affected by speed and how?
I'm sure there are calculations and numbers to better explain the effectiveness ... So please include those too.
What exactly is tracking speed? I know missiles are affected by speed somehow as well.
Any help would be greatly appreciated.

You get to places faster. More importantly sometimes, you get away from places faster. Also there are other effects.

Weapons in EVE basically fall into two categories - turrets and missiles. Both are affected by speed.
Turrets need to aim at their target. How quickly a turret can turn to aim at its target is the turret's tracking speed. If you move faster than the turret can track, it will not be able to aim at you. It will, therefor, miss you.
Missiles don't need to be aimed. They'll hunt you down and explode in your face. A missile's explosion has a velocity to it. If you're moving fast enough you can out-run some of the explosion. Think of a Hollywood movie where someone's running down a hallway ahead of a big ol' fireball.
You can also use your speed to dictate range. If you move faster than the other guy does, you get to decide what range you fight at. You can fly out of his range, for example, if you're doing poorly.

I'm not completely certain on the game mechanics, but ideally for the turret tracking to come into play you need to be moving around the target as opposed to directly toward or away from it since otherwise you are effectively at a set position to the target with just the range varying.
You can use speed to kite the targets, which tends to work very well if you have guns/missiles with longer range than they do. It works less well if you have short range guns/lasers and have to close to do damage.
In addition to velocity, missiles have maximum flight times (which is effectively range) so at some point either your missile or the enemies will explode short of the target. Note there are skills you can train to increase your missile flight time.

Clarification in italics.
To expand a little: turret weapons have a Tracking Speed attribute. Any target has an "angular velocity" which increases as the target travels faster, increases the angle between its vector of movement and that of the shooter, and gets closer to the target. If the angular velocity is greater than the tracking speed, you'll see turret performance decrease, perhaps to zero.
