Is there any way to keep your turrets active after killing one target instead of having to click on each one again once you've locked onto a new target?

nope. can be done with drones though if u set them to aggressive.

in that case, is there any way to activate all turrets at once, like a hotkey or something?

You can group your weapons and then activate them all with one key.
In space: Unload all weapons. Rightcklick on the little triangel right side of your capacitor -> enter grouping mode -> drag and drop turrets / launchers in one slot -> leave grouping mode.
In Station: fitting screen - > Unload modules -> press shift and drag and drop modules on one slot

I never knew about this method. I just click the unloaded turrets and shift-drag them onto the turret in the F1 position.

Hehe.. I didn't know about the in station version untill some weeks ago .

I never knew about this method. I just click the unloaded turrets and shift-drag them onto the turret in the F1 position.
I much prefer the shift + drag to right click into a menu then right click out method.
and it works in stations

Is it possible to have Turrets / Launchers in more than one group at a time. Group 1 has all your weapons, groups 2 and 3 each have half. Then depending on the targets, you can fire off all weapons at one target or engage 2 targets with half your weapons each. Obviously with the last group fire order taking precedence over earlier conflicting group fire orders.

Not the way you want it. You can have multiple groups of weapons, but one weapon can't be in multiple groups.

You can only group the same weapon-type in a single group...and by same weapon-type I mean EXACTLY the same weapon-type. For instance, if you have three 200mm Autocannons and one 200mm "Jackhammer" Autocannon, you cannot combine all four...only the three 200mm Autocannon. Also, all grouped weapons must use the same ammo.
I group weapons that are long range, medium range, and short range. I only have to hit one button to fire multiple weapons based on its range. As the target gets closer or further away, I can turn off that weapon group and engage with the appropriate group.

Hrm.. mixing ranges of weapons is bad, you should probably rethink your strategy imo. In pretty much any instance being able to bring 100% of your weapons to bear at a specific range is preferrable to only utilizing a fraction of your weapons. If you need to change range, have some different ammo ready to swap out.
