Hiyas.
I just reformatted and installed, and got my window placements and sizes just the way I like them, but for some reason, when I resize and pin the window for jet cans that I use, when I jettison and open a new one, it opens down the bottom of the screen in the default place and size.
Is there a way to make the client remember the settings for the jetcan window (and others that you need to constantly move where you want them to be)

Well I've given up on the UI as it seems to have a life of its own. But I think you can lock a window with the icon on the top right of it.

The short answer is "no".
The long answer is "no, but the game will be helpful and rearrange windows for you according to its own preferences on random occasions".
My advice is to turn the "snap to" distance down to 2 or 3 (i don't trust CCP to know how to handle "0" or "1" properly"), and make sure that any window whose size and position you like is at least 5 pixels away from any edge it might want to spontaneously snap to. Then check the options "Windows are locked when pinned" which makes pinning work the way you'd expect (ie: windows stay where you put them), and "only stack windows when shift is pressed" so you don't accidentally end up having windows stacking simply because the game couldn't figure out where else to put them.
Oh, and never, ever change the resolution. Switching between resolutions when you go windowed/fullscreen causes windows to move around, and pinned windows will end up being in a weird state where you can pin or unpin them, but you can't change their dimensions or move them around the screen.
Not that I have any gripes about the UI in EVE Online.
Now, as for jetcans: I've found that if you close one jetcan before you open the next one, more often than not the new "Floating Cargo" window will open where the previous one was (I usually have jetcans tabbed on the same window as "My Cargo", and drag the stuff from my cargo to the "Floating Cargo" tab).

I get the feeling that the game keeps a few separate windows that are shared between jet cans and station containers. If you want them in different places and sizes (the way I do), you will have trouble. One thing I have done to simplify my troubles is to stack all those windows so that I can minimize the hassle of adjusting them.

All of the above, plus:
* set the option to lock pinned windows (why on earth would you want to pin it if it was still movable!)
* set the option to not use the same window
* set the option to not stack windows unless shift is pressed
If you get stacked windows, they will always be stacked until you pull the tabs out.
