Me and my brother would like to get into some FW PVP. My question is, what would be most viable setup, ship wise, that we should fly, either for catching the enemy in the plex or for baiting at the plex entrance. I should mention that we only have caldari ship skills.

Theres no one good setup for all situations so will make the assumption you are going to run some offensive minor plexes since thats how most of us start out.
One of you in a frigate with Scrambler and Webber waiting at the warp in point (the point where you land inside the plex after using the gate, jettison a can with something in and orbit at very close range so you can point anything that enters). Good ship for this would be a cormorant fit with blasters since it will already be at very close range.
Your brother could also be in a cormorant but with railguns so he can run timer and still throw DPS on target and NPC's while not getting too far from the timer.
Its a cheap, simple setup and stands a good chance of bringing a good fight to most frigates that can enter a minor plex.
Or maybe get one of you in a griffin for ECM goodness to keep those war targets jammed? Also viable option for new pilots since they are also cheap and simple to setup.

Plexing has a lot of fast kiting ships usually. I'd suggest starting with affordable ships that can hit are range, like Arti Thrashers or Rail Corms, and get some experience til you find a set ups that works well for the two of you.

DISCLAIMER: I do not actively participate in FW anymore, but do frequent the plexes and systems involved.
A buddy of mine and I came up with a setup for tag teaming frigates we find running plexes on their own. We operate in w-space, but are always around FW systems for some reason and have come across pilots buzzing around buttons more than our fair share of times.
We fly Amarr, but I would suspect this could work for other races. We each hoped into a destroyer with as much DPS and range as we could. Then fit as many tracking enhancing modules as you can while also fitting the inertia something (whatever it is that allows you to align faster, I don't remember the name off the top of my head).
Idea being, you see the single frigate in a plex, jump through the gate, lock and pop before he can respond to your presence. It is by no means fullproof, but you will be surprised how many pilots don't notice you in system until you're in the plex with them. Also a lot of them are pumping MWDs which make them even easier to hit. 2 destroyers rigged in this way put out close to 1,000 dps up to around 35 or 40 km I think.
