Ok, so I have me in a shiny Harbinger and my alt in a Buzzard out Raven hunting guys w/ names like srfgaer454 and polmkkjjk33...you know the ones.
I can scan them down, warp to them AND agress them (either w/ a warp disruptor on my Buzzard or lazors on Harb). I know that they disappear after a minute or so, but when the log back in, they're agressed, right??
Well, I get lucky enough to do this to 2 ravens in 2 adjacent systems, got a point on both before they disappeared. SO I log off both accounts in a next-door system, log on another alt and watch for green boxes in my addy book.
Boom, there they are! I log back both main/alt again, enter system where I agressed the first ratter and of course, he logs off.
No sweat, I'm thinking...he's agressed so I have all the time in the world to scan him out, right?
Well, that's the thing...I scan him out again after he logs, warp to him, and then he disappears  
I went the the next system where I agressed the other guy and same thing: he logs and disappears as if he was never aggroed.
I'm new farmer hunting, so can anyone point out what I'm doing wrong? Is my understanding of the mechanics wrong, or am I missing something?

Your understanding of the mechanics is wrong. If they have logged off you cant aggress them even if you probe them own and shoot them before they disappear.

I don't have the most experience with this, but have known some players that were quite good at killing the macro ratters. As I recall, the way they got around the old logoffski was to scan them down before they disappeared and then dropped a bubble where they disappeared. (Provided it's nullsec.) When they logged back in, no more logoffski.
Now if your hunting them in lowsec, only real method to nail them is to aggro them before they log. (Impossible if it's a macro, as it will auto warp off and log off the second someone enters system, or the more sophisticated ones, when someone scans them down. Or of course bring some serious pain to pop them before they vanish.
I'm sure there are more experienced players that can offer more tips. Macro ratting (And even macro mission running.) are the new isk farming methods replacing macro mining since ore/minerals aren't worth a damn at the moment.

try fitting a microsmartbomb or something to your buzzard, then VERY VERY SNEAKILY make your way next to them, then decloak and hit that smartbomb It should hit and aggro them before they can log off.
((I have no idea how well this would work, just an idea))

Thanks for the replies. I'll give the bubble method a go; unfortunately, the guys I'm hunting usually log an alt in to see if local's clear. Sometimes they get lazy though, so we'll see 
Oh, and let me formally add my voice to the "logoffski = b effin s" chorus now. Can't CCP design something that distinguishes between escape->quit game from a legit disconnect???

No - because when they try to, people go from CTRL + Q to literally pulling their network cable out of the PC.
I knew someone who played EQ2 on a PvP server who had his PC set up next to his monitor, backwards so the network cable was always right in instant reach.
There's no possible way to determine a true intentional disconnect and say... a power failure at the customers house, or a downed internet line on a pole.

smokin him down in less as 60 is possible you need a lot of trys, prly wont work with the first time. My firstone escaped around 30 times =D shot him so often into deep hull was anyoing, it worked firsttime with a modulstuck and all my guns where overloaded as he pufffed. woot 40 jumps to next outpost ;P well trained char and dps setup or second bang bang... probing nerf means you need blob to do it and ****load of time... and or trys... dont focus to much with your chars hes alrdy farming in 4 different regions or something like that. few farmers have more as 20 accounts perma runnin and noobchar from pro-carebears or pro-ship-spinners usually, they most know: few farmers loose like 20 and getting slowly better... my pers rec is like 15 bs solo in smokin down in less as 60, in one week. But hey i have more screenshots from dissapearing vessel in deeeeeeep structure as 60ty kills. never say never

and waited...and waited...
Finally (as I knew he would) a he logged his pod-alt on and checked if I was still in system. Obviously, he didn't log back in.
So should I monitor his online-status from an alt, and log in my main as soon as he logs in?
/edit: how long do I have, exactly, before he disappears? 60 seconds?
I guess I could go super-gank route, but by the time I find them, they're only in space for about 10 seconds... 
I really really want to kill these guys!

this is a topic that really annoys me as well. can someone give me an example of a valid situation where you have logged off and someone scrambles your ship and everyone agrees that it should disappear? I think that if someone manages to nab you in that short time you are still in space the aggression timer should start again. tough luck if you had a real disconnect (which is very rare anyway, and if it happens a lot to you you might just have to risk it or go run missions in highsec on a bad net day, you sure wont be able to do pvp or anything gang related anyway).
at least they arent pulling multiple logoffskis on you :/ then they wont even warp back to the original spot. Reward small gang/solo pvp!

My thoughts exactly...anyway, update: I killed my first one! I got lucky because the belt he was in was close the the gate, so I warped to him w/ about 40 secs to spare - just enough time to pop him w/ overloaded guns 
The bubble trick is failing me because they log off AGAIN after they presumably see a bubble anchored.

Life was so much easier when they were just jetcan mining and had their macros set to send their drones on anything red in the overview. Not as juicy as ratting raven though, but still much <3.

Ok, so now I'm officially confused 
I too have been hunting these guys, as my little slice of New Eden is infested w/ farmer Ravens. The only time I can kill them is if I get a lucky scan and pop him before he disappears (which ive only managed to do 2x out of about 100 tries )
There's a topic on the Scrapheap boards about hunting farmers in the "piloting in practice" section. People there seem to believe that you CAN indeed aggro a farmer - post-log off and pre-"poof" - so when he logs back in, he has a timer.
They also said that aggro goes by system and is not associated with the player, which is to say (as I understand it) even if he jumps out of the system and jumps back in, the timer is still in effect in the system he was aggroed in.
Sigh...all this is giving me a headache. So which is it? is the timer in effect or isnt it if you get a shot on them before they go poof??

It should be possible to give him aggro - but only if he relogs in the 15 minutes after it. Scan him down, use a smartbomb to attack him. When he relogs, the timer is reseted to 15 minutes again, when he logs out again you have him. This should be possible, might have to test it again though.
