Assuming max skills, no rats, dont worry about pvpers eating my face and im flying a hulk (Or a skiff i spose for mercoxit).
Whats the most profitable ore to mine? I'll be refining it at my pos and the little tucked away system ive found has everything in it. Just need to know which to pick!

Mineral prices are so down atm that ice is probably the most prifitable thing to mine, especially when you take into account the fact that ice roids don't pop, so no retargetting, no moving arround, no wasted cycles. Havent checked lately so i might be off though...

Saying "mineral prices are down" is incorrect. Due to insurance, the combination of minerals used to build ships must add up to at least the insurance payout minus the insurance cost.
What you could say is "the minerals I mine are down", or "highsec minerals are down" (which would mean that 0.0 minerals like Megacyte and Zydrine are up).

But what are your logistics for getting it processed or sold, and what if someone blows you up? Also how do you mine - single client, in a fleet of friend, dual client, multiboxed? The answer to this will affect how you fit your ships to shift attention as needed and stay efficient.
In the end someone with a well-planned system for stripping some mission-belts of their ore, MAY do pretty damn well... and you really just can't say, all things considered where a miner SHOULD be mining. This game suits many styles and temperaments of gameplay, including mining.
Right now, for example, I'm being obsessive compulsive and stripping a level II mission of ore before I take another mission. Why? Well because if I decline another mission from my nearby higher-level agent in the next hour I will take a standings hit ( I only do missions that take on rats/pirates, not other nationalities ). So for this I have a planned mining fleet deployed, but shortly I will swap it back in for mission grinding. Next week I may scout someplace out for some higher-end lowsec mining. I just haven't decided yet.

OK then, for a serious answer? It doesn't really matter, so long as you don't care when you get paid. Mine the ore, refine it, and stockpile the mins until they're nice and high in value. Even lowly Veldspar was more valuable to mine than Jaspet at one point because Tritanium was through the roof - the market ebbs and flows. Ideally, you'd mine the ABC's rather than Veldspar all the time, but the point still stands - if you want to be paid more, just stockpile and sell when the market's high.

I prefer Plagioclase, myself. It refines into Tritanium, Pyerite and Mexallon, and Mexallon is worth about 30 ISK per unit. -----

Regular Kernite (NOT Fiery and Luminous), is always good, if you can find sufficient amounts of it. Mission runners pay a ridicilous amount of money for it, so it might be better than ice as well.
EDIT: Huh, I didn't read the topic at all, just the title and the trollish replies. Um. Yeah, if you're in 0.0, go Arkonor. Can't go wrong when a jetcan is worth almost 14 mill. Runner up is Mercoxit at 11.6, Bistot at 10.2, Crokite at 8. The rest of the 0.0 only ores are all better than highsec ores, but not by much. If you can't find any of the above in your spot, don't bother ;)
Also, those prices are assuming you can actually get the minerals to Jita.
