Or better yet - how can I tell which systems have academies in them?

Look for the station which has the 360+ day orders with a quantity of something like 111 or 114. Usually the station name will have something to do with a shool or academy etc.

Systems that neighbour the newbie areas. The likes of Amarr, Gellente-Prime (I think?), Caldari, and so on.

In game you can only see the current region. Just look for orders of 364 days; only NPC can create those.
I usually use EVE-central when looking for stuff.

Just keep in mind that some skill books are not sold by NPCs and are subject to market supply and demand. These books usually come from agents/loyalty points. -------------------------------- CCP can patch away bugs, but they can't patch away stupidity. |

And there's only a handful of them. So about 99% of skillbooks are sold by NPCs. The prices for NPC skillbooks can vary though, but generally not by much, and in the lesser faction regions, like Ammatar or Khanid. Mostly it's either NPC-sold or not - some skills are only sold in their corroborative NPC region, but they're mostly high-end skills, like Dreads.

I have some of the schools in my sig but that list is old and doesn't include all the new ones - but the new ones are all at the school system the Event Agent is listed at.
You can just do a show info on any of them and they'll show which systems they have schools in. Also the ones they have agents in except (at least at the time that list was made up) for their tutorial and career agents who were not listed in the schools show info. You always have a Tutorial Agent (first two missions) in your starter system, then another Tutorial Agent and 3 Career/Event Agents (each gives a different ten mission set for their specialty) at the school system a few jumps from the starter system. Doing the two tutorial missions in the starter system will cause that agent to give you a link in your People and Places/Agents list - and - there is now a pop up showing the Career Funnel listing the nearest three agents.
Most of the skill books can be found at any of the faction schools bases. Thus, if the base is owned by the same school as one of the starter systems, it has skill books. Not all schools carry the same skill books though.
