Is this even realistic for high sec? The only thing I could find that holds minerals is the silo structure but its capacity is abysmally small.

Some assembly arrays are decent for storing large volumes of stuff, but hangars are pretty much the best for cost and fitting for what they hold.

Everything can be used for storage though.
Corporate Hangar Array is normally used for storage. I use a Component Assembly Array, since it uses less power (bit smaller though). Ship building arrays are also commonly used for storage.
Note that you can offline an array when it is full, and online another one. You can't access the offline array, but you don't lose what is in it either.

if you're mining in a station without a station and want to use a POS for storage until you can get a freighter to haul out all the ore, I strongly recommend going for one of the ship assembly arrays for storage. The X-large can hold 18.5 million m3 of ore. While a standard corp hangar can hold 1.4 million m3 which is frankly pretty small if you have a big enough op to be stripping a no station system of any size.

Mining with no station in system...
Large non-faction POS (so people don't blow it up for the hell of it). Some guns to scare people away - med and small plus a stasis and disruptor. A mobile intenive refinery or however you call it. Fit corporate hangars till you can't fit more.

A good way to store more ore than you're likely to mine in a few days is a large ship assembly array but remember that you'll really need a freighter to haul all that ore off to the refinery. Do not use a refinery array. Also keep a ship maintenance array around for refitting your ships and mount some labs if you feel like it. Mount guns to taste but skip the large ones.
