Dominion was supposed to bring moons and planets closer to the action so they would seem bigger but somehow CCP screwed it up a little.
Un-docking from a station next to a moon sure looks fabulous untill you start to zoom out. Before Dominion you'd be zooming out in a way that mostly your ship and the station got smaller while the moon would continue to dominate the view which gave you a pretty good perception of the gigantic size of one of those cratered rocks. Now however you're zooming out with both the station AND the planet getting smaller in your view which gives a perception of a tiny rock next to the station.
This I found true with all stations I've visited so far since Dominion and I wish CCP would give us the old, more realistic view back as this kinda looks comical really.

I thought the idea wasn't to resize the planets but make you land closer to them, or at a more picturesque point anyway.

Depends on how you zoom out. You can control your FOV in pretty interesting ways now, which either preserves background or foreground size or keeps them both the same relative size, but just makes everything smaller.

The patch notes also noted a change in field of view. I'm guessing that this is what made the difference?

The FOV was just about removing the fisheye lens effect we had going on...
But yeah, i've noticed that things are quite out of scale since the patch, and it bothers me. :(
