I have numerous friends who are all looking to try EVE but, knowing them, they probably wont stick around if they can't get a chance to experience real PVP (without feeling like cannon fodder) while on trial period. What's the best way to go about showing them some PVP on a trial account?

here is a good way, get them started with a military career, run them through the tutorials so they can get the free training books and such, then run a few missions with them cause they will need isk, help them with a skill plan with getting essential learning skill and train them up to cruisers. Caldari is the quickest race to train into a ship and get some pew pew in cause missle skills are easy mode. than join a faction warfare corp and get them into the fleet battles with faction warfare, alot of noobs are into faction warfare and such so its leveling the playing field in a sort. caldari may be the quickest but i feel are the weakest in pvp.
this is all my opinion on how to get in on the action quick so take it or leave. just my 2 cents.

I'm no pvp expert, but afaik shield tanks and missiles are generally seen as weak in pvp. Shield tanks take up mid slots, which can be used for so many more interesting things. On missiles I'm not qualified enough to say..

Drakes and Blackbirds are pretty amazing for solo and small gang work respectively, but in larger fleet ops most people prefer armor tanked ships, since armor rr is way less of a pain to fit than shield rr, and more efficient.
Plus, missiles have flight time, which sucks major nuts if you're hoping to engage beyond 20km.
Minmatar Rifters are great learner ships, and the Amarr have Arbitrator which is also capable of some pretty amazing stuff. At the battleship level, the Amarr are the current fotm.
But, really, it's not a big deal what race they choose. Cross training -- especially cross training for frigates -- is quick and painless, and the race you start as only gets you about an hour of free racial training. So, in all honesty, just tell them to pick whatever race they think has the coolest RP and then cross train to whatever ships they think will have the biggest domage.
And from there, FW, lowsec piracy or RvB are all viable learner options for PVP.

guns in pvp are usually better because like stated above, missiles have flight time, but guns on the other hand are insta-hit, at short range missiles are about as effective as guns, but at a range it goes back to guns are instant hit and missiles have flight time.

Have all your friends make suicide ganking destroyers. It'll only take a few days of training. Sit on a high sec pipe and gank a few afk haulers. They'll learn the basics on range, dps, fitting, targeting, and fleets. Get them to download Eve Fitting Tool and EveMon then turn them loose on finding the best fit and skills to train to maximize DPS while minimizing skill training time and isk per ship.
It's not true pvp, but it is a good introduction to the mechanics and can be fun and profitable. It can also be accomplished with trial accounts.

In all the years I've played MMOs, I've found that in any kind of dev-organized PvP the law of Conservation of Ninjutsu generally applies to the factions as a whole.
As for the OP, I'd suggest faction warfare, or maybe Red vs Blue. If you do go FW, I'd suggest the Minmatar, they seem to put up the best fights every time I run into an FW fleet.

FW is fun. I'm a veteran pvp but joined it for a change of pace on the amarr side. There are plenty of rookies there along with the veterans like me willing to play with you. And by play I mean both kill you, teach you, and on rare occasion, teach you without killing you. -----------------------------------------------------
