My favorite dish to cook and eat is jambalaya. I make it with shrimp (and occasionally spicy sausage)from scratch, with fresh garlic, green onion, green bell pepper, diced tomato, creole seasoning, a quarter bottle of cayenne pepper sauce (the big bottle of Tobasco, not the ****y little one) and a jalapeno. Best enjoyed with a frosty bottle of beer, preferably a bock or lager.
It reminds me of French classes in high school, where I used to get compliments on my Cajun cooking. Better times =/ and that's why it's soul food.
Edit: forgot that it just wouldn't be so good unless 1/4 bottle of Tobasco is added when the rice is added in...

Angel hair pasta, with a kinda simple 'family recipe' sauce that I cook up..
Really is a fine dish.. well, for me at least, and if i can get in the mood enough to actually cook it (yay being alone. Ugh i gotta cook/clean alone)

Steak with my "special ingredients"(beer) with mashed potatoes, corn, and some good dinner rolls... Salt and butter is a must.(And A1 sauce).
My absolute fav easy to make meal would be a mix of either sloppy joes or chili dogs however.

Brisket.. slow smoked Texas style.
It takes me 4 days to make.. the first 3 days to let the marinade and then dry rub do their thing, and then 24 hours on the smoker. Wood fire only.. charcoal and propane are for yankees.
Meat so soft and tender you can cut it with a spoon; it can't be cut into "slices" because it falls apart.

My oma's egg pancakes. The recipe I use is not quite my oma's, but it is close enough and I added a twist to it. It was my favorite growing up, and now my daughter and wife love them too. They are also a major hit with my wife's family.
I put jelly and powdered sugar on mine, but my daughter and wife must have peanut butter and syrup on theirs.
Surrender is still your slightly less painful option. |

Chili.
Mostly Dennisons with a slice of cheese mixed in and a chunk of cheese to dip in it. The cheese can be Monterrey Jack, American or Chedar (preferably sharp).
Also some unsalted corn chips or crackers.
And some dark beer.
There were times in the past when I used to use this Chili Mix to mix in with it - and Chili Peppers but I haven't done that in a long, long time.

I'm going to have to agree with you on this one. Brisket just proves that if you put enough spices on meat and cook it long enough, it'll be tender. Still tastes like the worst part of the animal, because that is what it is.
Before anyone else talks about how good Texas or southern BBQ is, I've tried BBQ from places like that and all I can say is that most of them can't cook. Surrender is still your slightly less painful option. |
