I need help fitting a Covetor for mining in low sec. Its gonna be solo mining so I need to be able to handle the rats and get away if I meet a pirate.

I may be mistaken, but I think you'll need a hulk for this. Barge is thin skinned.

Do yourself a huge favor. Calculate the isk/hr you will make in lowsec and compare it to the isk/hr you will make in highsec. Then re-evaluate.
There are very helpful calculators online for this, like cerlestes.

What he's saying is: lowsec = highsec except you can mine jaspet (veldspar and like all the highsec ores are better) and you get ganked.

Don't bother leaving highsec to mine unless you're going into 0.0, lowsec ores are ALL worse than what you can get with a decent highsec ore. Jaspet is currently THE worst ore in the game for ISK/m3 and Hemo isn't far behind. Hedb isn't quite as bad, but there are still four highsec ores that will give you better ISK/m3 than it. If you want to try mining for money while living on the edge a bit, pull out your probe launcher and go looking for a wormhole.

For that you'd be better off with a tier 1 mining BS like a domi or geddon. With upgrades they can pull in almost as much as a covetor and have a decent tank. Plus they are relatively cheap and fully insurable. A domi can also mount a decent defense/offense with it's drones even with a full rack of mining lasers.

If you fit for hull tanking you can get 13k EHP but your shield will die from rats easily, you can't actively tank anything in low sec to forget it.
As others suggested, get yourself a battleship, its the only way but even so, low sec you will die ;)
