I am currently working towards skills for freighters. In the mean time I am going to just keep using my Iteron Mark IV to do my hauling I think. I am very bad at fitting ships with the right gear. Can anyone suggest a good setup for my Mark IV that will assist in making sure I make it to my destination in my Ity and not my pod?

To be fair, if suicide gankers want you dead, you're dead.
Itty's can fit a bit of tank, but generally it just won't cut it.
If you want to arrive safe: don't haul expensive stuff and fly your ship manually.
If you really have to haul expensive stuff, use a ship able to fit a better tank.

It is easy to properly fit a hauler. Your fitting only depends on what you are carrying:
Cheap crap - Fill the lows with Cargo Expanders.
Expensive Goods - Fill the lows with Inertia Stabilizers.

Will I have better luck making a freighter more resistant to damage?
And when you mentioned a better ship, what kind would you suggest?

Are you going through high sec or low/null. How about a cloak?

Is there a good recommended ship with very large cargo holds that would be better for low sec (like .3 .4)?

Transport ships, preferably the cloaky ones. The +2 warp strength ones are usually fine if you have a scout, too.
