I'd like to join a corp and get hangar access. I'm looking for a profession or combination of professions that would make it sensible for the corp I join to grant me access.
I'm considering: - industry (basic stuff like making rifters, afterburners, etc) - science - freighter pilot
Thoughts?

The profession that needs the most hangar access?
Obviously corp thief. Be sure to apply as such. Apart from that, I concur with the poster above.

I think you are going about this all wrong. The problem is... you are trying to create a generic setup for a very specific role.
First off, it's obvious you want to gain access to the hanger in the hopes of stealing ships. Now let's see... unless you plan to also have access to setting the POS password, how will you get the ship out? You'll need skills to fly the ship. The problem here, what kind of ship? Unless you know ahead of time, you have to be able to fly all kinds. Since we can assume you want to steal good ships, you are looking at skills that will take some time to train. That is unless you plan to bump the ship out of the POS shield, which can and is time consuming.
OK, so after you figure that out... you need to think about the corp you are trying to rob. Honestly, from the stories I've read, you want a nub corp with noob players who have no clue. The less clue, the better. In that case... they won't be looking at your profession. You just want to impress them as a shiny, skilled player, who can help build their corp into what they dream and hope it becomes. The problem is, you need your character to match their corp goals. No sense trying to join a mining corp and stealing their hulks if you are purely PvP skilled. You won't be a good match and may already be raising alarm bells.
And really, if you want ship maintenance access... give the corp a reason or incentive to give it to you. Offer to station an expensive T2 ship that meets their needs at the POS. If they are a mining corp, be an Orca pilot and offer to station at the POS, but just point out you need access to get your Orca out.
Lastly, why not try to shoot for higher? If it's a small corp, being a director lets you raid more from them and is probably easier to work your way towards gaining such trust instead of going.... hey, my profession is X I need Ship Hanger access. Sorry the latter screams Danger Will Robinson, Danger!
So really, I think you should reevaluate your plan and think less generically and work towards more specifically robbing one corp and work towards only that goal.

Firstly, he asked for hangar access and no access to the ship maintnance array. Depends the type of corp you are stealing from. If it is someone in 0.0 you should probably train to be a JF pilot and I bet that would help you get access to most of the hangars.
Secondly, you do not need to be able to fly the ship to be able to steal it. I wonder how many T2 or faction ships a carrier can fit before someone notices. And if it is a problem and you need to bump it out, doesn't changing the password do that or... or even giving the password to the person you want to steal it?
Lets be honest. Most people do not give hangar access to people they do not trust extremely well if there is anything of value in those hangars.
