none of the in-game music works, all of the other sounds seem to, though. When I open the jukebox it just endlessly cycles through the music.

You need to move your $WINEPREFIX/drive_c/Program Files/CCP/EVE/res/audio/Jukebox to somewhere else. I just rename it to Jukebox.broken. See Bug 21373 - Jukebox dont work.

Getting the jukebox working is problematic on 64Bit Linux installs. Most probably you are missing a appropriate libmp123. I do not want to go into detail. A quick fix is to use winetricks to install MS Windows Media Player 9 and link the mp3codec so it can be used.
in commands: winetricks wmp9 [assuming your have wineprefix set the default way] cd cd .wine/drive_c/windows/system32/ ln -sf l3codeca.acm winemp3.acm
Restart EVE your jukebox should be operational now.
Enjoy the nice EVE music.

Even on windows I just played the music in VLC in the background. The EVE sound engine is FUBAR at the best of times, even on Windoze.
However, I will try this out, see if it works.
