Yeah I quit Eve a couple months ago because I suck at finding stuff to do.
And uh, when Tyrannis was announced it seemed really meh to me. The impression I got is that since it's just 65k planets, and Eve has like 400k players, the big alliances will just grab 90% then smaller business corps will take the rest. And once Tyrannis was like a week old they would all be taken. And none would be left for normal people, like myself.
Am I right?

you are completely wrong. there is no limit to how many people can "take" a planet.

PI is not for normal people. It is a click-fest to maintain.
However, Alliances can only lock you out of 0.0 system planets and NPCs can lock you out of their key planets. All the others are free-for all. Short of running a constant blockade on the Customs Office, there isn't much anybody can do right now about preventing or removing your PI infrastructure. They could set up competing colonies on the same spot(s) as yours to drive down the production.

The compeditive element is pretty minimal for the time being. Even stacking your own extractors right on someone elses doesn't necessarily cause an issue. If your account is still inactive I'd say to just ride that for a few months to let things stabilize a bit and possibly give CCP a chance to make a few tweaks to PI. I suppose PI is for normal people but that is kinda subjective. Honestly I don't consider myself or anyone else playing EvE all that normal ;)

No you're not, do not worry. 
There are lots of usable planets, each with quite a number of resource hotspots for every type they produce, they won't all be taken. The absolute best spots might be taken, but that isn't certain at all, and in Low-sec it may very well be rather quiet on the planets.

Tyrannis is very very meh. The good news is that (I think) they're planning to improve it a lot over the coming months. See the Eon features for this issue: http://www.eveonline.com/eon/
