Ok been trying to find a guide a real one, the lore doesnt interest me much I just want an outlook of all the missions, rewards etc but cant find out.
I noticed a few months ago someone posted a diagram of missions -> rewards and their location but cant find it.
Any help is much appreciated.

Considering if you loose a ship, I think the verdict is "None whatsoever" in terms of pure cash rewards from missions.
Around 5 mil isk per mission.

I've just finished the minmatar wildfire arc which gave me 10 RSS core probes in the final mission which I just sold for 150,000,000 
In total I've probly made 300+ million with boutys, rewards and salvage etc

which is pretty terrible considering the amount of effort it takes.
edit, the only reason for me to finish the minny epic arc would be the side effect free faction boost.

That depends on your situation though 300 mill is nothing to bill gates but it's alot to a micronesian pygmy 
If you could do with 300 mill then do the Arc

Sorry for the noob question but... what missions do people usually head towards after the Sisters Arc is done?
I'm a bit confused about these Arc mission charts that reference the Sisters as Level 1, and then jump to talking about Level 4's.
Do you just find random agents in the meantime or what?

Yes, you do regular agents or one of the many other things EVE has to offer.
Doing epic arcs is not something you can easily do as a full time occupation, but something to break the repetitiveness of regular mission every third month or so.
