Not as bloody as it should have been, but seems perfectly edible. Not really a fail. ____________________

I agree with the above poster. Definitely has, well, a hint of colour left. I'm more of a medium/medium well person anyway and you're welcome to cook for me any day you please.
...except today, I'm stuffed.

Looks perfect to me as you seem to have it heavily spiced which would mostly cover the taste of warm bovine blood. Now a fat steak grilled with no spice on a hickory bbq pit is required to be nice and bloody to enhance the taste imho.

for steaks that thin you really should cook them on very low heat, just enough to brown the outside and get it warm.

Strange, I've always been taught that the thinner the steak, the higher the heat. After all, you want to brown the surface before the heat reaches the center.

If it's not mooing then what's the point? Blue to medium-rare depending on the cut and quality, anything more and you may as well be eating bacon.

Bah. thats not a fail. My steak however was completely black on the inside. But that was expected since it was ashy on the outside after grilling it for...30-40 minutes I think. Was too busy drinking.

^this.
Personally I like "well done." I don't like blood in my food.
Problem is understanding that "well done" doesn't necessarily mean "burnt to a crisp."

I read somewhere that cow's milk contains a tiny amount of blood, don't know how much truth there is in that though, just wanted to share it.

We don't get to drink the natural milk cows produce though, so it is somewhat irrelevant. The milk has to be processed before it becomes the produce we buy from the store and that process involves destroying all unwanted contaminants from the milk. The blood won't end up in the final product in any detectable form.

I am genuinely concerned with the lack of quality hot sauce for it to swim in.

Sauce hmm. After you have cooked your steak to whatever your fancy the pan will be swiming in lovely meaty juices. Add plenty of double cream and a tablespoon of mustard to the pan and simmer for just a couple of minutes. You can then pour this over your steak.

Edited by: Magnus Orin on 11/08/2010 18:05:24 Well, as a former chef, I will give you this; it is quite difficult to get those thin steaks to a desired temperature.
Try a thicker cut.
Rule of thumb for gauging temperature by eye is this: Give the steak a light squeeze with your tongs. If no blood comes out the steak is still rare. If blood comes out of the sides but not the top, it is medium rare. If red blood comes out the sides and top it is medium. If blood has already begun to pool on top the steak and is turning grey, it is medium well. If all juices coming out of the steak are grey it is well.
Edit: the guy who posted a picture of a steak above knows what I'm talking about. Sarcasm - Because i'm too far away to strangle you. |
