Obviously you have PvP and all of the subsets of that (solo, small gang, blob, etc etc)
But i have seen plenty more
1. Trading wars which can be the most expensive in all of EVE
2. Building Wars when people are fighting to control the distribution of a certain item. This one can get really nasty as it can involve several types of warfare.
3. Mining warfare. If you have ever seen a bunch of hulks mining roids out from underneath each other you will realise that the anger of pvp has nothing on this.
4. Inter alliance/corp takeovers. These are completely destructive when people attempt to gain support for a personal gain within a corp. These can split alliances/corps and have bad feelings forever afterwards.

Can flipping, salvage theft, bounty theft, killing people from inside their own corps, suicide ganks, and some of my favorites... stringing along PvPers, getting chased for 20 jumps and logging out, clone jumping while camped, and cloaking in enemy system. ^_^
Getting directorship or recruiting power in a corp and then kicking everyone but the CEO out, unrenting offices, mayhem, drama...
I always say, "Points aren't given on whether you win or lose, it's how much you annoy your opponent."

Meta Gaming Warfare.
This can be seen in forum hacking, DDOS attacks on enemy corp/alliance forums and TS/Vent servers.
Forum Warfare.
Essentially psychological warfare by degrading your opponents on CAOD and other forums in an attempt to weaken their morale and induce a failcascade.
0.01 isk warfare
A subset of trade warfare where you race to update sell and buy orders by 0.01 isk margins. Essentially boils down to a bit of luck and a lot of attrition.

I get what you're saying but would consider all of the things listed in this thread Player versus Player encounters. Not necessarily pew-pew encounters but certainly PvP. Just a small gripe.
