When a ship has an attribute called "Gravimetric Sensor Strength: 20 points", does that mean I can only find/scan gravimetric things? Or is it just a bonus to finding/scanning gravimetric things?

Each race's ships have different types of sensors. Amarr ships use radar, Caldari ships use gravimetric, Gallente ships use magnetometric, Minmatar use LADAR.
The sensors all have the same impact on gameplay - you target other ships. Other impacts of the sensor type come into play when you're using ECM target jammers to stop an enemy from targeting you or your friends. The short version is that a gravimetric jammer will be better at jamming Caldari ships, LADAR jammers will work better against Minmatar ships, and so on.
One of the more popular ECM target jamming ships is the Falcon (based on the Blackbird hull). Should you wish to learn more about sensor types and ECM, just search the forums for "Falcon" or "ECM." There are enough articles on ECM on these forums to keep anyone entertained for a few months because of Falcon.

Oh, so it does not affect the scanning of Gravimetric/Magnetometric/Radar/Ladar Signatures at all. Just targeting other players, right? |

To clarify: having Radar/Grav/Mag/LADAR sensors will make no difference in this respect, only sensor strength.
