I was mining in my WH last night at about 9pm CST. I accidentally left a couple jet cans with ore in them out at the site when I logged. To my surprise, they were still there when I logged in today at noon CST (obv way after downtime)... why is this? Was it a bug? I thought they despawn after 2 hours...?

Since it is impossible for you to actually be "in" a wormhole, I'm going to assume you're talking about a w-space system. This information however, is applicable to any system in EVE.
If nobody is online in a system for long enough, the server cluster saves its contents to disk, drops that system from memory, and uses the hardware resources to power other, more important things (like laggy fleet battles, or mission runners in Dodixie, whatever) running on that node currently. When this happens, the despawn timers on things like wrecks and jet cans get paused (or maybe even reset, I'm not certain) until the next time somebody enters that system, at which point they start up again as if nothing happened in the meantime.

I had something similar happen to me. After a few too many drinks I got dead in a LVL 4 mission. Something like 2 days later I got a new ship and completed the mission. In the second pocket were my drones from the first time I was there.

Completely different. Drones exist forever basically, like the old mechanic for anchored cans. Do some directional scans in mission hubs, and you will likely find hundreds of abandoned drones.

Abandoned drones normally only last until DT afaik.

Nope. They will last till they get picked up or 30 days, same as a GSC. I saw one sitting at a gate in null for about 2 weeks before someone finally cleaned it up.
