I'm a bit lost as how to figure out what drones to use on a given race or mission.
I mostly do damage on Gurista's and I think that the best drone is the Vespa. But I base this only on the damage done versus the damage they are weak to. I have heard some stuff on maybe other drones would be better due to speed or orbit or other stuff I don't know about.
If you have a guide for me to read or any place that I should look to find the information please link it and I will read it. Otherwise please backup statements made so I can understand fully.

For missions, always tailor the drone to the weakest resist of the NPCs if using small/medium/heavy drones. It's different if you use sentry drones, but I've never used them so I'll leave that description to the experts.
For PvP, most of the time Warriors are best because they are the fastest and do Explosive damage, against which a lot of ships have a weak resist.

keep it simple:
Angel missions = Minmatar drones (warriors, valakries, berserkers, Bouncer)
Anything Else = Gallente drones (Hobgoblins, Hammerheads, Ogres, Garde)
unless you are using Sentry drones dont touch amarr/caldari drones they just suck.

Gallente drones are finest, while they are average against everything, they effectively can be used against anything. Ideal for all players who cant, or dont like to swap drones after each encounter.

Here are the facts.
You match the damage type of the drone to the weakest resist of the NPC and you will get the most damage. The exception is EM drones... never use them. In all cases, NPCs that are weakest to EM have therm as their second lowest resist, and the much higher damage modifier on the thermals makes them the best choice.
I'd personally vote for kinetics as the best "average" drone also. There are more kinetic-vulnerable NPCs on average, kinetics fly faster, track better and are cheaper. Though use your head here, if you're missioning in Amarr space them thermals are the clear winner, etc.
