The families probably are considered Imperial Princely families and are therefore headed by Princes. There are several mentions of Lords during missions but this is a very broad term, does anyone know the hierarchy within the Amarr Nobility? For example do they have Knights? Barons? Counts? Etc... Discuss!

As far as I can remember the only widely used title in the Empire is "Holder," with the major Heir families just being the most powerful Holders. I've heard of plenty of NPC's referred to as major or minor Holders but that's all I can think of at the moment.

As far as I know, the only details we have on hierarchy is:
Emperor Royal Heirs House Holders (Nobles that are directly part of a Royal House, and hold high positions of feudal authority) Holders (Nobles appointed by the above - usually minor members of houses, just aligned to the house, or possibly semi-independent)
The web of Holders is likely to be a ridiculously complex matrix of relationships. I imagine you'll have township Holders; under city/regional Holders; who report to planetary Holders; who serve under system and constellation holders; reporting to royal houses, regional Holders, mandate governors, Emperor Family Castellans, and what have you? There are so many tiers to this feudal system, and the system itself may vary dramatically from house to house, region to region, etc, that it may simply become pointless to bestow a separate title at each level.
Holder both seems to be a general term akin to "noble", and a kind of broad-spectrum title that allows the Empire to avoid having to make up a whole new set of titles each time they expand. It was simply easier to say "these are the rules that apply to everyone of noble lineage" than to start on "these are the laws for knights, these are for counts, there are for earls and dukes and barons, these are for princesses and heirs and kings and kinglings..."
They found a system where a broad set of laws could be handed out to make sure everyone was on the same playing field, then the regions of space were divided between the Houses, and the Emperor said "go ahead and stack your lords however you like, make up rules for it they don't behave, I'm late for my footrub." ----- Amarrad - A Language Project |

Feuds can go on for generations. It is also implied that there is an intricate political network of allegiances and vassals between Holders. In extreme cases they will rebel against their liege lords.[1]
Types of nobility:
Royal Heir: The leader of one of the Royal families.
Holder: Apparently all nobles are called this. Although it seems that they vary greatly in importance and power. "Lord" is simply a way to refer to a Holder.
Clergy ranks: These are presumably all ordained, though I haven't sorted them in any particular hierarchy.
- Arch deacon - Deacon - Archbisshop - Bisshop - Cardinal - Bisshop - Priest
Theology Council Honorifics/rewards:
- Clerical status: This status may be awarded to individuals outside the normal clergy at the discretion of the Theology Council.[2] - "The Holy Inspired": A title given by the Theology Council, to highly revered artists among others.[3] - Sainthood: Individuals of exceptional holiness that have entire cathedrals dedicated to them, generally they get canonized after death.

They also have paladins, which if memory serves me correctly are their elite troops.

The exact meaning of "paladin" depends on the source. However, as a generic word it currently just means an Imperial soldier or a guard - for example, the lowest rank in the Faction Warfare is Paladin Crusader.

I think a paladin is a mundane warrior with at least some law enforcement authorities it would seem. I've seen news items where paladins are keeping the peace, or making arrests.
I've also seen mention of "enforcers".
