I have recently got a Loki to run C3 WH sites with. I would also like to be able to swap subsystems / modules and use it for pvp if I want. At the moment, I have CCC rigs in it to keep a 400 dps tank for the sleepers. Are there any good fits for pvp using CCCs, or should I use something else?

TBH i don't think there is much better than CCCs.
In a T3 you have to be very selective of who you engage. Extra cap is always handy.
Down the track though, if you got another Loki hull, try some medium shield extender rigs instead

Buffer fit, with extenders and invuls, and extender rigs.

Wrong.
There are many rigs that are much better for PVP. Cap stability is overrated and you almost will never need more than 1-2 mins of cap to win a fight in pvp.
There several options for rigging. You could put medium core defence field extenders on your ship if you are passive/buffer shield tanked. You could also put on projectile rigs (i.e. aertor/collision) to increase your damage (which is probably pretty lackluster). You can also put on rigs that deal with your shield tank--i.e. anti-em fields, core defence field solidifers to increase tank, and capacitor safeguard rigs to reduce cap usage from the shield booster.
Furthermore, if you are a speed loki fit, for pvp you might consider speed rigs (i.e. aux thrusters), and if you are armor fit, then obviously trimarks/resistance rigs. Potentially even electronics rigs would be useful to you if you decided to make an instapopper.
I would suggest going with medium core defense field extenders though if you plan to use this loki for pvp also (in which case you should buffer fit it). If the CCC's are needed for the WH fit, then put them on, but don't bother using it for pvp--no point taking out a 400mil hull only to die because your rigs were sub-optimal.
