and are they doable? I keep hearing that they removed things you need to use the items you get or they removed stuff you need to do the missions. Plus that you can only do it once

Done a few gallente cosmos mission bout 4 days ago seemed to be working as usual.

I've had my corp driving standings with the gallente cosmos and they've all worked fine.

Is the you can only ever do it once thing true and how does that work exactly?

COSMOS agents will only let you so their mission/mission chain once per char. Idk how more simply I can put it.

And keep in mind that you don't get a second chance even if you fail the mission.

They are still there and working. But like others have said, if you accept a mission and then can not complete it, your screwed. Each one is only once per character.
Some of them are pretty tough. On one of the missions I couldn't break the tank of a named BS with a standard mission raven. (arb cruises and 3 t2 bcs) I had to go back with faction ammo and my alt in a blaster boat and he melted in about a minute. There is also quite a few that have you doing courier work in low sec. If you can't fly a ship that can use a covert ops cloak I would make sure you have a good scout.
