This alt is my main hauler and industrial and is minmatar so when I decided to train for a JF/freighter I went with my race, as time has gone on and she is trained pretty much as I want her to be I started training up another alt on the account which is going to be where I need her to be pretty soon so I decided to train up JF/freighter to 5.
I mentioned this in passing to a friend who pointed out to me it would be easier to train gal frig 3 and gal indy 5 then train level 4 gal freighter, it would give me the same cargo capacity with a Obelisk/Anshar as the Fenrir/Nomad with level 5.
I initially thought this was rubbish but apparently to train min freighter and jump freighter to 5 will take me approx 80 days with optimized attribs as opposed to 23 day approx to get gal freighter to level 4 for the same hauler capacity.
With this in mind would it be possible to increase the capacity of the Fenrir/Nomad in the future?

What the Minnie Freighter and Jump Freighter lose out on in terms of cargo space they gain in agility and fuel efficiency (respectively).
I don't think you'll be seeing any changes at all given that CCP (and they greater EvE community) wants/likes to preserve the [more or less] specific "traits" of each race.

I understand that the Mini freighters are faster and more agile but in most cases I fly these ships afk when ever possible, I've had other alts flying the other races freighters and tbh I never noticed the difference, big slow and a pita to move.
As for the increase it's just more appealing to me to stay true to my racial ship types, but when it comes to straight up numbers there is no good reason to spend the time to train up the Mini skills when the Gallente solution is just plain better.

so, it seems its not a problem of the ship but your intentions of using the ship. Gallente fits better for your uses apparently.

hmm no. I woouldnt like it if there were no choices to be made.
With tech 1 rigs;
Gallente has the most roomy tech1 at level 5 38433.1m¦
Amarr has the roomiest Deep Space Transport 36219 m¦
Minmatar has the Roomiest tech 1 at level 4 27129.2 m¦
Amaar also has the roomiest Blockade runner when fit for cargo 10921.6m¦
Caldari has the roomies Blockade runner with no cargo mods/rigs 4375 m¦
As for freighters and JFs:
Caldari has the roomiest and slowest and least efficient fuel/cargo ratio.
Minmatar has the smallest and fastest and best fuel/cargo efficiency.
IMO you should have to choose or Cross train. Its so boring when its all the same.
Oh and you would only need to train Caldari frieghter to level 3 to get more than minni freighter lvl 5 and galente freighter lvl 4
