Currently I'm using an ATI HD 5500 which I got at a discounted price for ú35. It runs EVE on high graphics at 60 FPS but it falls to 20 FPS if you enable post-processing and anti aliasing(with low setting and 2X).
So, does anyone have an insight into what graphics cards are best suited towards EVE? And what company? ATI or Nvidia?

Ill sell you an ATI 5750 for isk ~ message me in game. If that's allowed, gotta check in on the whole selling isk thing, maybe for time cards or good old fashion gold, shrug?

I'm pretty sure it's not allowed as it's RMT. :P But really I just want someone who is running all settings high at 60 FPS to tell me what card they're using.

nvidia works directly with CCP now. I don't know whats up with ATI, I really don't think that current Eve will run much different with ATI. However it did sound like some of the Incarna character physics stuff is direct technology that was developed with nvidia. Even then I couldn't say that ATI hasn't built in the same stuff.

Nvidia pays CCP some pocket money for promoting their cards. Any mid range card from the current or last generation of cards will run eve max settings at a decent resolution.

For now, there isn't a significant difference between using ATI or Nvidia hardware, the client performs all the physx calculations on the CPU instead of on the GPU.

That's just PhysX, it's Nvidia's physics simulator. Basically it can run from an Nvidia GPU or your CPU, but the CPU isn't as efficient. If you go with ATI you'll have to use your CPU and if you go with Nvidia you'll have a choice of either using your card or using the CPU.
If you have two PCIE slots you can use an 8800GT and up to run PhysX all on that card, a dedicated PhysX card. I'm not sure if that works while using a main ATI card though.
But if you can live without fancy physics simulation than either ATI or Nvidia will do.

I just bought this based on the mailing I got from EVGA and CCP a week ago. I couldn't take advantage of their 10% off offer since I don't live in the US.
It'll run both of my 1920x1200 monitors at 60FPS with EVE's performance settings. At the quality setting it drops down to 30 FPS.

Ahh I see, niiice, I heard rumours that it wasn't doable with an ATI card and I heard rumours that it was, not something I really looked into since I use an old 8800GT for PhysX (Because I had spare slot and a spare card) and a 285GTX.

I just picked up a GTX 560 Ti for $200. It's kind of the current "sweet spot" card.
