I've been flying caldari with shields/missiles only for a while and want to branch into amarr for armor/lasers. I'm just starting amarr cruiser skill today, and medium energy turrets.
Assuming I want to learn to use these ships on missions for a while, which frigate --> cruiser --> BC --> BS route should I take? Just looking for suggestions, as I'll probably try a bunch of different ships out. It would be nice to know which are absolute crap right off the bat, and which are the best in class.

Take a look at Nightmare. Raven pilot + amarr BS + large energy turrets = NM pilot.

I took this same route a while back when I discovered that I hated the raven with a passion that defies logic.
As far as frigates, it doesn't matter much. The executioner or punisher should both be able to handle any level 1. Once you get into cruisers, it changes a bit. Your standard Amarr pilot would likely pick the maller, or maybe the omen. As a cross-training Caldari, however, I'd recommend the arbitrator. Fit it like a drake, with a big fat passive shield tank, and it will take a ridiculous amount of punishment, it should be able to handle 3s too in this sort of setup assuming you have good shield skills.
The harbinger is the go-to BC for Amarr, it's a fantastic ship. You can even fit a passable shield tank on it if you really want to, just don't tell anyone you're doing so for pve. The armor tank is definitely preferable for missions if you have the skills.
Once you get to battleships, you're going to have to armor tank, there's really no other way. The armageddon really isn't worth looking at for PvE, it's simply too hard to fit enough damage and tank. Its navy version can be quite nice if you have fantastic laser and drone skills though. The Abaddon is a great ship, but I feel it's designed more toward buffer tanking. It's a bit difficult to maintain an active tank and a good rack of lasers. The apoc on the other hand is very easy to fit comparatively. Cap stability is extremely attainable, and what it loses in raw damage it makes up for with its range bonus, which means you'll be using multifrequency farther out (not just more damage, but more thermal damage, which can make all the difference in some cases). It's really a toss up between the abaddon and apoc, but personally I'd choose the apoc, especially if you're new to Amarr BSes.
After this point you can finally move on to the ship you'll be pretty much custom-skilled to fly, the Nightmare. It will blow sansha/blood missions away like nothing else, and you'll only have to pulse your tank a few times in all but the toughest missions. It's a real joy to fly.

As already mentioned, the Arbitrator is a great ship for missions and decent for PvP. In general the T1 cruiser lineup is lacking.
Edit: or the Phantasm. It's not the best ship around these days but it's also not horrible at missions and can still be somewhat respectable elsewhere.

This. The Omen is worthless compared to the Arbitrator, especially for people with low SP. _________________________________

And if you want to sit in some of the best looking ships the game offers, look at the command ships. They are also not just a pretty face
