I've been looking at getting into minmatar battleships to do some missions, and I'm looking at the various types of ammo and it looks like there's damage for EM, EXP and Thermal, but no kinetic? If I'm going up against Guristas pirates, what kind of ammo should I be using since Guristas are weak to Kinetic damage?

All projectile ammo does kin damage. If you want one that does kin/therm it's phased plasma you want.

Always use PP for Gurristas. Don't use titanium, less damage for same falloff

Speaking of projectiles, is using faction ammo worth it for lvl 4s or not?

For artillery, very much so: extremely efficient with their low rate of fire. Autos on the other hand are very expensive to operate with faction ammo. You'll have to do the math yourself there and I suspect you'd still come out ahead in the long run with faster completions, but I wouldn't suggest it off-hand.

With autocannons you are most likely better off investing in faction gyrostabilizers and using standard ammo in the long run. Unless you are aiming at maximizing the completion time, in which case getting both makes sense.
Not sure about artillery, but there is the problem with excess volley damage going to waste when shooting targets at low HP.
So if you dont find yourself having targets with very low HP on your last volley all the time its probably not worth going faction ammo. For example if you need three volleys with standard, but target has typically only a sliver of structure left, faction will reduce to two volleys.
Obviously, the more volleys you need per target, the more sense it makes going faction. You wont really waste a lot of isk either though due to low RoF.

Over volleying is really a non issue using faction ammo and artillery. Noone said you have to group all your guns together. You can go with groups of 2,3, or 4 depending on what ship you're using.

In general (Serps, Guristas...etc) where you want Kinetic as a primary your best option is Phased Plasma but there are some exceptions. EoM have very strong Thermal resists so you're best off using EMP (because they tank on shield and EM is their second weakest shield resist, although they do have quite good armour EM resists IIRC).
