What are your thoughts on setting your POS to attack anyone or simply let people look around and retaliate if attacked etc?

Setting ours to be nonaggressive to random tourists. What triggers an attack would be -5.0 standings with us, or lower. -5.0 sec rating or lower, or if sec rating is dropping (that is, you attacked someone next to a row of gun batteries. congratulations). Just doesn't seem there's anything to be gained by shooting up random people (I'd imagine majority of those would be other industrialists doing surveys and the like).

i have set it to kill everything that comes near my half a billion investment, its a matter of preference i guess

My corp and I are in the early stages of planning a POS. One question we had is about the offensive capabilities. If we set it up in a .1 to .3 system to shoot anyone but corp members on sight who takes any security hit? The POS manager? Starbase tactical officer? Is there even a security hit given?

And no, there is no security hit involved, nor should there be. In order to fully protect what is really your claim to the moon.
While harsh, I don't think this is diabolical in any way shape or form. We ourselves have had to avoid agressive POS while scanning moons and its really a simple thing to take precautions against.
The way I see it, if you don't have an invitation, you don't need to be around our uberl33t isk investment.

I think that if you have your POS setup to fire on anyone that comes to the moon except corpmates, you should have to have the POS listed in the system menu and it be listed as hostile. This would only be fair for everyone envolved. Kinda rough to be in a 0.3 system mining and a few rats come in. You warp to a moon and BOMB! 0.2
