With the introduction of small and medium sized POS I think our corp is going to try one out. I read the Structures 101 Guide from the sticky which is a bit outdated but a it was a good start. The lingering question for me right now is which race tower to get. Is there any real difference? We'll be located in empire BTW.

Amarr because it has more PG,and you could fit lasers if you wanted which use no ammo. Just my thoughts though. ----------------------------------------------- CANADIAN |

well this is somewhat misleading... the crystals will get destroyed eventually and will need to be replaced (they burn out firing too much... i think it's at 200 shots too...)
But I do agree it's the perception that there is no ammo which is nice...

I was thinking of Amarr for that reason. I'm a bit confused if it is possible to provide defense and mining at the same time on the small station. Can I have a harvester a silo and something to keep the bad guys away when I'm not there? Or will I need to be guarding it if I have it mining.

Welcome to the POS industry. Before you get your feet wet (or start drowning) here's some advice.
SCAN FOR A MOON. the main difference between a sucessful POS and a failed one can be summed up in 3 words Location. Location. Location.
As always it depends on what you are planing to do with it. POS are not only for moon mining, some are defence, some are refinery stations, some are playgrounds for the truely insane. As you said you will be located near empire, you will most likely be for production.
The type of POS you choose mainly will depend on you access to fuel i.e. ice. For a small corp, or one just starting out into the POS industry, you will most likely want to pick a tower that fits with the type of ice that can be found nearest you.
Blue Ice - Gal Clear Ice - Amarr White Glaze - Caldari Something else - Minnimar
Amarr does have the highest Power Grid (PG) and is favored for several 0.0 POS as it can support several weapons. Power is life. However it has the lowest CPU.
Caldari has the highest CPU and therefore can support the most that a production POS would have to offer. CPU is isk. However it also has the lowest PG.
Gal and Minn are somewhere in between the two.
As I said, unless you wish to buy your ice and haul it from one end of a region to another, I suggest selecting a tower that suits your nearby ice field.
1. Select a moon that has at least 1 metal in it if possible 2. Set up your selected tower 3. Fire it up and have fun.

A medium one is fine with 2 harvesters, small reactor, silo and some defence you can create your simple reaction. Small POS cannot handle reactors and harvesters together. There you are limited to fighting or only mining.
An aprox daily cost for POS are 1.8m Small, 3.6m Medium, 7.2m Large

While we're on the subject of POS's, what would some of you experienced POS owners recommend if one was considering a POS for refining purposes (not moon minerals - ore minerals)?
Is there a better size of POS that works for this purpose? What kind of limitations could we expect depending on station size? __________________________________

I have not even set up station #1 and I'm already planning for #2. 
Thanks for all those who have replied here in the forum and helped out in POS Funtime chat. I have a pretty good idea of what I'm doing now.
A note for others interested in starting up a small POS. You can't fit a reactor and miners on a small. So don't get too excited about producing T2 components as a result of your 1 small station. You'll be moon mining the raw materials and selling them straight up and it can be difficult to find a buyer willing to pay a decent enough price.

Was just thinking... POS are not only for moon mining(Galente100%Silocapacity), some are defence(Minmatar, best sentry bonuses), some are refinery stations(Caldari, most CPU), some are playgrounds for the truely insane(hmm?).

A refining array requires a whopping 4000 CPU to keep online. The gallente small has 1600ish CPU. A medium is double that. So I think you'll only be able to do refining on a large.

I think there is a medium intensive refinery out there now too that uses less so that you can. not sure of its cpu or grid reqs though.

The bad thing about the medium refineries is you can only refine 25,000m3 every 90 minutes. Regular intensives do 200,000m3 in twice the time (3 hours). So it mainly depends on how much you plan to mine and how often you're willing to make a trip to the POS to reload and restart the refinery. Also keep in mind the 75% refine yields. If you're mining in empire in most cases a POS refinery will be useless. It's best used in 0.0 where you have to haul good ore and don't wish to risk the payload, IMO.
