So which is better for sniping at 200km or so? Apoc has more power so I can fit more lasers. But Geddon has that extra low slot and the RoF bonus. Which should I get and the setup I use?

Above what a sensor booster 2 and two tracking comp 2s will do I think an Apoc is better. Under 120km and I'd choose a Geddon.
5x Modulated Tach
1x Sensor Booster 2
2x Tracking Computer 2
8x Heatsink 2
Melts **** from 110km. Closer is even more insane. I've gotten projectile type wrecking hits with Tach 1s.

What you need to be concerned with for a sniper isn't the low slots but the mid slots.
and to get either to hit at 200km by itself is not possible.
By itself with T2 beams is about 140km with radios(I forget if that was including falloff or optimal with radios)
Apoc does it better cuz you can fit more and your looking for first volley damage output.
Problem is 4 mid slot.
need boosters to extend range locking capabilities and need tracking puters to increase range.
you need 3 tracking puters by yourself to approach 200km if not 4.
if you use 4 puters. then 81KM max locking range. doesn't work.
3 puters 1 booster. max locking range is now 125km ish and your max range is 170 ish
still no good.
2 tracking puter 2's and 2 sensor booster 2's......
max range about 140ish max locking range about 160ish
now your in business.
By yourself.
not sure your skill lvl's but try this for base setup and go from there to fit your skill lvl.
Apoc.
8 mega beam 2's
2 tracking puter 2's/2 sensor booster 2's
whatever power mods you need to fit that and all remaining free low slots are heat sinks.
I think I got it at BS lvl 4 and an RCU2/PDU2/rest heat sinks.
BS 5 might allow me to loose the PDU for another heat sink.
With Beam spec 4 I get about an 8.2ish damage mod and about a 7.5 second Rof if I recall correctly.
Also find it has a better affect if you stagger your fire by about a second per gun. just a slight pause between activations.
to reach 200km you need to be able to lock that far first then get boosted by a second tracking link loaded logistic ship buddy.
AKA: change the above setup to 3 sensor boosters and one tracking puter. Your buddy has to fit enough tracking links in order to get ya there and has to have them activated on you for it to work.
If I recall correctly atleast 3 tracking links have to be activated on you to even come close to 200km.
Plus the 3 boosters will allow you next to even instalock inties. Prolly 5 second inty locks with 3 boosters. Bs to BS like a 2 second lock if not faster.

There are low slot tracking/sensor equipment.
Try Sensor Amp 2s and Tracking Enhancer 2s.

As everyone else has said, can't do that alone.
Most common setup I see is apoc/geddon and a support raven for sensor/tracking boosting and anti-frig duties. You could probably manage with an apoc/bb.

For shear damage a geddon fitted like so is king at 100km or less.
7x Mega Beam II
1x Sensor Booster II
2x Tracking Computer II
6x Heatsink II
2x RCU II
The main problem is the CPU ussage, need a 5% implant and lvl 5 on the skills reducing cpu need for ur modules.
