Interceptors: Tackler and fast recon ship
Assault Frigates: Multi purpose heavy frigate

Basically, interceptors use speed as defence while ass frigs (I love calling 'em that) use tanking as defence.
Also, overall the ass frig can put out a greater DPS than the interceptor.

Tackling is like in soccer or football where you stop your openent from bringing the ball forward, it's also called tackling right?

If by tackling in football you mean shooting him in the face and running away with the ball, then yes. They are the same thing.
