I suddenly feel the need to waste some time running around bashing critters and whatnot while I wait for TES IV to come out towards the end of the year.
Im not really bothered whether its an MMO or just your bog standard offline play RPG, but im looking to fill the genre gap in my playtime.
Any suggestions?
(note: WoW does not count as a suggestion.)

Give Guild Wars a go, no fees, and 2 play options
Roleplay character for adventuring throughout the game, which is pretty huge btw, and option 2 gives u a pure 20th lvl starting pvp character, which u can create and tinker around with, good if u don't have the time for prolonged play, check it out

Have they fixed the massive lag in ryzom? I remember the interface being fairly clunky, and the lag making it 10 times worse.

Anarchy Online allows to download and play the base version (without expansion packs which add new zones) for free, until January next year. No monthly fee or anything like that, and plenty critters to bash.

lag is mostly fixed in ryzom (did a 14 day trial rather recently), but the game still severely lacks any kind of content so far. i'm considering getting me an xbox and jade empire for running around and breaking stuff.

Totally different to all the other stuff suggested so far, but give Fallout a go. It starts slow, but once you get into it, it's an awesome game

Maybe 'Vampire: The Masquerade'. Got rushed out on release, and the cut scenes are awful, but it truly is a masterpiece of a game. You can pick them up for about ú10 too

Also played vampire, and yeah, I agree, it was a great game. They also fixed the crappy cutscenes in one of the latest patches aswell.
Ive gone for Ryzom for the time being, though i think I'll eventually try GW for the hell of it.

For MMOs, I would certainly not recommend Ryzom...well unless it's very, very much different and improved since I played during open beta. About the only thing there was to do IIRC was kill varying degrees of monsters, selling loot and buying better stuff to kill tougher monsters with. I won't begrudge the pretty good skilling system but that alone does not a good game make.
There's a free Anarchy Online thing you can download and play for free till jan 2k6, which is the basic game with no expansions (which have to be paid for seperately). It seems quite fun, but with much less player interaction at lower levels. It's very hard to get anywhere and unlike Eve, your chars there are *very* restricted on what they can or can't do. You choose a profession and stick with it, with no options to change or cross train, at least AFAIK.
Guild Wars I play quite a lot and think it's great fun, as well as having no monthly fees. The PvP has rewards system rather than Eve's penalty system (you get benefits by winning there, rather than penalties by losing here) and is very much a team affair with lots of strategy involved (no ganka-squads). The PvE is quite good too though has some annoying quirks (many of which the dev team are constantly addressing).
Offline, don't know what's out on the PC these days. I'm also waiting expectantly for Oblivion, as well as NWN2, Dragon Age and Hitman: Contracts, but if you have an X-Box "Jade Empire" is a fantastic RPG game with real-time combat and a great story, GFX, sound and cool characters. X2 the threat is a spacey-RPG sorta game a little like Eve which you might enjoy, and there's a sequel to that coming out soon too, called X3: The Return (of what, we're not too sure!).

I tried Anarchy Online since it was free. I went around bashing snakes and birds, and bug like things and they were dropping armor items!? Like what would a snake use armor pants for? Hmm... nevermind, maybe I looted it cause it ate some poor bloke wearing armor pants.
It is mildly entertaining though. I've only played it a few hours but does it get any better?

"It is mildly entertaining though. I've only played it a few hours but does it get any better?"
I guess it depends on your definition of better ^^ when your character gains levels and invests the experience in their 'nano skills' it gradually opens access to different class-specific abilities which can enhance the gameplay a lot (all abilities use shared, renewing resource when triggered.. a bit like the capacitor in Eve) Higher level enemies also gain their own abilities, actually use them and can work in teams a bit better than Eve rats, so the combat might become quite tactical.
