I just started going after pirates in the newbie zone, and I've been finding a pretty varied selection of loot in the containers. Is this basically all junk that I'd be best to just sell at the station, or are some of the items actually useful/unique...ones that I should hold on to until I have the skills to use them?

I always used Naga loot shop website to see if anything i picked up was of any value.
You could use the same thing

Both viewable ingame as out of game (granted out of game is still a lot faster)

well define "usefull", for some players module A is very usefull while for the other player it's totally useless.
All depends on the profession you're doing, what way you wanna walk.
btw, you can still reprocess the modules to build better modules/ships later

It's actually a mixture of junk and good stuff. In fact, one of the points of hunting pirates or doing agent missions is to get some of the rare, good items that you can sell for millions.
Generally, what I do is I collect a week's worth of loot in the station, then I look at it and sort it out. If the item has a standard name (like 125 mm Railgun I, or Basic Expanded Cargohold), I recycle it for minerals. If it looks like it could be special (implants, or modules with an uncommon name, like 125 mm "Scout" Railgun I, or Local Hull Conversion Expanded Cargo), I keep it for sale.
You can always right-click on any item and choose "show market details" to see what it's worth on the market; look at what other people are selling it for. If it's good cash, you will have to sell it, rather than recycle it, but otherwise you generally collect too much junk to be able to sell everything, so the best idea for the "junk" is to reprocess it and sell the minerals (you can make several hundred K, maybe even millions, per week, selling the minerals from loot).
The NAGA Loot Shop site mentioned above has listings for most of the rare and valuable stuff, if you want to get an idea of what those modules are called or what they go for on average.

One way to tell if an item is worth something is right click on the item and select view market details. If yo usee it is selling for a few thousand Isk then it is probably usable. But if you see something selling for a few hundred thousand isk then you know it is something of value. I was killing rats in .7 space and one of them dropped an expanded cargo hold but it had a different name and lo and behold people were selling these for 4-6 million each!

I let my crap loot stack up till I have a good amount then put it on the market. If the sell order expires I refine it. I make millions every night while I am sleeping from selling crap mods. ------------------------------------- You are all worthless, and weak.

Not the amount of a particular item, but the number of open orders is. Trade skills mainly effect your ability to manipulate orders placed several systems away up to being able to manipulate orders accross an entire region. They also increase the number of open orders you can have. ------------------------------------- You are all worthless, and weak.

As a general rule
Anything with "basic" in the name is crap and should be reprocessed.
Keep normal items that you may need in future (ammo, blasters if a gallente etc)
Reprocess other "normal" stuff
Try to sell "named" stuff. Examples of named stuff is 125mm "compressed coil" gun, 280mm "scout" artillery and so on.
