That is a thoroughly skill dependent question.
Like any ship as you skill up, you'll be better with it and achieve more with it.
Expect, if a relative newbie, to have an easy time of some level 2 and some harder level 2 missions. In my limited experience, as you develop your character, some level 3s will be a cakewalk, on others you'll get your backside handed back to you on a plate.

Your not gonna do lvl 3's with an Interceptor. Try lvl 2's... you should be able to do lvl 2's whith an Interceptor. But Interceptors are not made for missions... they are made more for PVP.

lvl 2s dont give me that much money though... havent worked my way up to lvl 3's but seems like they would be WAY more profitable.

Yeah, Inty's are more usefull for PvP.
AFs on the other hand .. are mission monsters. Spy Stash is the one lv 3 mission that will give you probalems, but most missions are easier/quicker in an AF.

The reason: webber frigates.

I do some L3 deadspace missions in an interceptor just for th heck of it.
The missile nerf also affects them as much as it affects you. They could not hit for crap.
I use an inteceptor with a cold gas or AB II. That gives you as much as 1300m/s of speed, and a small sig radius. Can't use MWD in deadspace anyway. I have experimented with at least 3 different race interceptors and AFs with L3 missions, including Maledictions and Ares.
Some tactics have to be involved. You need to identify who the webbers are then draw them out from the spawn. Far far from the main spawn so you can isolate then dogfight them to the death. You put a command to orbit the webber at 15km, which puts you in a safe distance from the web.
Blasters are not recommended not even in Gallente inties. Neither are pulses recommended for Amarr frigs. Instead, use rails or beams. Range is important, since you need to kill the NPC inties over 10km away, beyond web range. Missiles work too, and the new missile changes are good.
Know your limits too. Don't face high level L3 missions with an inty. Mid to low level L3 missions are okay.
L3 missions without webbers can be dealt with easily. Brainless even.

I've had variable success with my Claw in lvl 3 missions. But I have to be honest in saying that at the moment I run only courier missions and get dished out the odd kill mission by my Agent.
As stated above, I look for the webber first and go for him. Praying my shields (plus booster) hold out until I kill him. After that it's really is a piece of cake. Unless it's frikkin' Caldari with their missiles, still have trouble handling those.
Granted, I do have most of the navigation skills maxed out for speed and have trained a lot of skills to get the most out of the small ships I love to fly.
But I also need to warp out 'often' to get back to the Station to fit some reppers and hang outside until they fix my little ship
