I have only ever placed items to be courier'd, never actually tried to do them myself.
I wanted to try one, but there appears to be no way of seeing what I am actually accepting to carry, other than relying on the description, which could be anything the player wants to type.
Am I missing a r/click option, or something? Have looked everywhere for the cargo manifest, but can't see one.

afaik there is no option to check the content. just size. another option is to break the package but then you lose your deposit and failed the mission, the item is yours then.
makes sense imho as usually the postman won't know what he is transporting also

Speaking of courier missions, a pretty newbish question - what exactly are "courier mission scams"? I've seen advice not to take player missions because they're mostly scams, but never anything specific about how to recognise such missions and what exactly to watch out for?

Only thing I dunno is, can anyone insert contras into the parcel?
Just found this from Patch 3106, It is no longer possible to create a courier mission containing any contraband.
So all missions are safe, just the routes may be dodgy.

there were 3 kinds of scams.
1. the standard escrow scam, before there was a way to check what you will get or see remaining runs on bpcs.
2. curier missions were created with very high deposits that then contained usually completly use- and worthless stuff too big to be transported. (you miss the deadline and pay)
3. the missions took your through low sec space allowing the creator or affiliates to shoot you, get what you were transporting AND keeping your deposit.

as you can't enter them into escrow missions i don't think you can enter them for courier missions. this system is not only based on local legal status of the item but global. for example you can't even enter slaves into an escrow in amarr.

So, items which are illegal in another region can still be entered in local region? If so, how do you know of their legality to be carried into the destination region? ;/

Courier missions are fine and I have completed loads in my trusty hauler.
You cannot view the contents of a package until you have accepted a mission. Once you have the plastic wrap you can OPEN the package to see what's inside if you wish. However if you BREAK open the package then the mission cannot be completed and you will lose the colateral once the mission time expires.
However, as with most things in EVE the player must be carefull. Before accepting a mission check where the start and end locations are. If in low sec space then some players may try to kill the hauler so they get the collateral and if they're lucky they get their goods back. Also don't accept a mission if the package size is too big to fit any of your ships as the package cannot be split up and thus you will not be able to carry it and complete the mission.
Look for multiple missions going to/from the same locations as these can be profitable especially if you can carry more than one package at a time. I also avoid low volume high collateral missions as I can't see the need for a hauler if the package will fit in a frigate.
