Right now, I lock a target, then click on the different icons. Then I have to lock on the next target and repeat. Did I miss a trick in the tutorial?

f1,f2,f3 etc is quicker

Lock as many targets as you can (train Targetting skill for more than 2 targets), then, as Deja Thoris says, pick one and hit F1 F2 F3 etc., when it's dead, pick the next and repeat; once they're all dead or whenever it's convenient, lock more targets. |

Also, if you hold control + click on the target, you get a lock.

To fire them at exactly the same time, click on all the modules you want to fire so the mouse gets a screen wide crosshair, and click the target. This will lock and fire all your weapons/modules as fast as quick as your ship can lock.

This is a bad idea in secure space because if you misclick on a station or gate it's CONCORDOKEN time.

Hit Escape, and one of the tabs has a "Clear" button for every window that you checked the "Don't show this again." box in.

Activate all your weapons first, then target. When the target is locked, all weapons will fire in a single strike.
Not a good idea for missils but works fine on Turrets.

Spacebar is too big for that, bad idea as it is too prone to "Ooopsie!" Better use the enter key on the keypad.

If you think you have made a mistake using this method, tap the right mouse button before the target is locked to cancel the guns, it does not cancel the lock but it can save your skin.
