I have looked around... but I am confused as to what the strengths of each race are.
can anybody give me a general rundown of what each race is good for?
Appreciate the help.

Check here for the different backgrounds for each race.
You can fly any race's ships, and the skills to do so (as well as the ships) are easily available almost anywhere, so what makes a race better than another has mostly to do with roleplay and history.
The Amarr are into religion and slavery, the Minmatar are anti-slavery and are generally fighters / freedom-fighters, Caldari are about industrial efficiency and being loyal to your corporation, and the Gallente are about individual freedom and entertainment / arts.
The ships (again, you're not limited to one):
Amarr ships are generally into armor defenses and brute force via laser cannons, Minmatar ships are a mumbo-jumbo of parts strewn together in haste, and are usually fast, can use either shield or armor defenses, and use projectile guns with a mixture of other weaponry (missiles, drones). The Caldari ships usually have shield defenses, good Electronic Warfare, and a combination of missiles and railguns, and the Gallente ships go about it with short-range blaster guns and lots of drones.
You can customize the Attributes of any of the races to suit your purposes (choose the Custom option at character creation), and the starting packages/skills for all of them are similar, and won't affect your game for more than a day or two.

There are no real differences between the different races. The only difference is that if you choose Caldari for instance you will start with the Caldari frigate skill, choose Gallente and you will start with Gallente frig skill. This just means you can fly their frigs immediately without having to purchase and train the skill.
Race is not currently of importance - it is the skills you choose to train and the ships you choose to fly that make the difference. Any race can fly any ship if they have purchased and trained the skill to do so. Eve is not like WoW, EQ etc. where race has some inate character traits.

One sign that CCP did a good job of balancing is that there's a wide representation of all eight possibilities (16, given choice of sex, but that has no effect upon any attributes).
If anything, I'd guess there are more Caldari than the others, but I wouldn't wager an awful lot on it. Celt Corp [center] ISS |

Something of slight note here:
We are in the middle of a cold war. I highly doubt CCP will make being Amarr in Minmatar space something that you get blown up for, but you never know. If you have friends playing, you may want to choose the same race, or at least ones not pitted against each other. Never know what the future may bring.
Also, and this mainly applies to Minmatar and Amarr it seems, expect to get more than a few hostile remarks from members of the opposite race. The roleplayers in Eve like to use the slavery issue, so even if you aren't a roleplayer yourself, you may end up getting caught in a player event or simply a heated debate.

I suppose to play the race you find "coolest"  Read through the backgound of the races and say "Yeah! I like these guys!", and play them.

The most common are the Caldari cos they look normal.
