it can go to a belt, but it cant pick anything up.

Why would you want to? They cant grab stuff from space anyway... so it'd be pretty useless. :|

I think their main purpose is to make the transportation of the huge quantity of bits required to build an outpost possible.
They also get used by traders to move mucho stuff from where it's sold cheaply, to where its bought for a higher price.

They are for the people that want to build captial ships, you need to move ( sometimes ) so much m¦ of minerals its sick. Same for building outposts your talking about billions of ISK in minerals. Same for large scale battleship/t2 production. Or what about moving millions of units of high-end ore ( like crokite/bistot/arkanor/merox etc ) from stations without a refinery to a station which has one in 0.0?
It isnt ment for a small/medium scale mining corp that wants to haul their ore out of a belt faster.

Freighters and You: the definitive guide to playing with really big toys.
First, before the question is even asked, Freighters do NOT have a jump drive, and thus warp and gate-jump perfectly normally just like any smaller class ship. What this also means is that should you want to, you can warp a freighter to an asteroid belt or planet, or basically anything in deep space just like any other ship normally could.
HOWEVER, there is a caveat with freighters. You can only ever load the cargo bay while in a station. So for mining operations they are all but useless unless you wanted to haul the yields from a mining operation from one station to another, then their capacity is tremendously useful as it would take nearly 30 hauls in an iteron 5 with perfect rig of expanders to match what an Obelisk could do in one haul with default skill bonuses.
Another use that Freighters are aligned towards is of course outpost building. Without the freighter, itÆs just not in the cards.
Freighters are really intended for the necessities of the largest operations. ThatÆs not to say that solo players and small groups canÆt or couldnÆt find use for them, but larger operations are where they really shine since they will likely need hauling of many hundreds of thousands of M3 in ôstuffö daily, and so the freighters perfectly fit the need.

I know you can't transport assembled containers or secures but how about doing delivery of missions package? And if not, is there a smart way of transporting goods for many people without the nightmare of writing everything down? |

Delivery missions are station to station so I can't see there being a problem.

As far as I know, you CAN move cans, they just have to be repackaged first. I am not 100% sure as I do not have a Freighter at this time, but this is what I have read on other posts.

When I herd about this ship. My friends had the bright idea to buy one and then fill it up with nothing but cargo cans. Then purposly get destroyed so 100000000000000000 cans are at a gate. So when people warp to it. They freeze up and then we gank them. Guess you can't do that eh?

Considering the price tag on this ship, I think that would be one of the most expensive gank attempts in the history of EvE. Have you looked at how much you would have to pay for this ship, not to mention how much you would pay for the cans? I think you would have to gank 1/2 of empire to just break even. 
I'm not even going to get into the training time it would take just to fly this thing to the gate so you could self destruct it.
