Just click on your EVE icon twice.
However I'd recommend two clients (just copy the first, and delete /cache and /capture) to avoid conflicts. If you have two hard disks (not two partitions, two real drives) put one on each to speed things up. - Proud member of the [23].

You need to have a good computer first. I run an Athlon 2 ghz with a gig of ram and an ok video card.
First you turn off all sounds and effects. To do this hit esc key in game. You dont want any extra stuff running at first. I dont even load station environment. Then pick window mode and adjust the size options depending on your screen size.
Then do this for your second account. It sucks not having any sounds, effects or what not but you want to be as lag free as possible.
What I do is use my 2nd account for hauling. I warp to the belt with my barge and start mining, then minimize the screen and do the same with the 2nd account.
sometimes for no reason one of your accounts may crash to windows. No worries, just load her back up and fly back. I find that it works best in less populated systems.

Yes, many ppl do this. I ran two accounts on a P4 1.9ghz machine with 512 meg of ram and on the whole it was ok till I got into belts with others mining and drones flying and then I lagged to hell. I asked and was told to get 1gig ram. This I did and, hey presto, no more lag. I find the best way is to run the game in a window and drag window to top of screen (to hide blue bar at top). You can still see a small strip of the top bar and can get to the minimise button. Open both accounts and run one minimised whilst playing on the other. You can then swap between them in a one second. You can then fly them together for missions and such. Tis great for mining and hauling, or mining and protection in low sec space. Tis even better when characters are in diffent corps and can spy/scout in enemy territory.

i run 2 accounts fine on a P4 1.8Gz with 1 GIG ram. Windowed mode and no sound for lag free play. Investment Opportunity:

It's getting increasingly hard to do though, my machine have frozen up on a number of occassions this last week. 
Remind me about The Maze.

I run three at times, and just turn off sounds on all but the main. Sometimes if I don't i'll hear some hiccups in sound from the other two.
