I have only recently built myself a Stabber and a Rupture, I have used them both for LVL2s - I use 220mm ACs x4, 2 assault launchers, 1 med repper, AB 10mn, cap recharger and a cap relay (can't have a relay on the stabber - not enough lo slots), energised armour plate x 2 - each for a sepearate kind of damage. Oh and a webber.
The Cap recharger sits in the mid slot and the relay in the lo slot, they both do the same thing really, they allow you to run stuff without the capacitor running dry, this means you can run an amrour repper (and the AB continually) for good fair time while being hammered by cruisers in the 2 difficult LV2 missions (kill the informant and damsel in distress)
With this setup in either the Stabber or Rupture I can sit at 5k and just tank lvl 2s and I only have 1mil skill points.
You will need to know what type of damage the enemy are going to do to you in you missions to be able to fit out your armour corectly - if you would like a list message me in game and I'll send you one. Fitting energised plating means that you have a much lighter fitting requirement on the Grid too, leaving more room for other stuff (like guns :) ) I think that a 400mm plate costs about 20-30 grid?...something like that and energised costs 2; and considering you'll need 2!......And somoene might be able to help out here, but plates lower your speed i think.
You may well be trying to take on LVL2 a bit too early if you can't fit your ship to survive, the missile spammers shouldn't really even get to your armour before they are dead - I think there are a group of 3 in kill the informant at the start that have a lot of range, but stick on the AB and get to -10k fast and web them 1 at a time.
My skills are rubbish, but most frigates are dead within 10secs or so.
I have all 3 of the Minny cruisers but the Scythe only gets used for minining, I built the other 2 with what the Scythe mined for me, its a mining ship, just not a gun boat unfortunately.
A corp would normally help you out with lots of early frustrating problems, if your not in a decent one then I humbly suggest you should try to find one.
I didnt think that it was important until I was in one, just look at all the experienced ppl on the forums and see how many are in corps.
Good luck..get a Stabber or Rupture!  and see them enemy fry!
By the way, a Scythe can sit in .5 with 3 mining lasers mining Golden Omber all day long with 2 assault launchers as defence. With the 20% mining bonus on that ship it can turn a good yield.
